This is a quick and easy side dish I made up to complement any fish or chicken dish with spinach, diced tomatoes, and that rich Roquefort cheese (any blue cheese will work).

1 tablespoon olive oil
1 small yellow onion, sliced
1 (14.5 ounce) can diced tomatoes, drained
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 pinch salt and pepper to taste
3 ounces Roquefort cheese

Steps:

  • Heat the olive oil in a skillet over medium high heat, and saute the onion until tender. Stir in the tomatoes and spinach, and continue cooking until the spinach is wilted. Season with salt and pepper. Stir in the Roquefort cheese, and allow to melt slightly before serving.

1/4 cup butter, softened
1/4 teaspoon garlic powder
1/4 teaspoon each dried basil, marjoram and oregano
1 loaf (1 pound) frozen bread dough, thawed
3/4 cup shredded part-skim mozzarella cheese
1 large egg
1 tablespoon water
4 teaspoons sesame seeds

Steps:

  • In a small bowl, combine butter and seasonings. On a lightly floured surface, roll dough into a 12-in. square. Spread with butter mixture to within 1/2 in. of edges; sprinkle with cheese. , Fold dough into thirds. Cut widthwise into 24 strips. Twist each strip twice; pinch ends to seal. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 40 minutes. , Beat egg and water; brush over dough. Sprinkle with sesame seeds. Bake at 375° until light golden brown, 10-12 minutes. Remove from pans to wire racks.

2 (10 ounce) bags prewashed fresh spinach (or 3 6-ounce)
1 cup fresh parsley, chopped (or basil, or cilantro, or watercress)
1/4 cup sherry wine vinegar (or your favorite)
salt
pepper
lemon wedge (optional)

Steps:

  • In a large pan insert steamer and pour in 1" water; bring to boiling.
  • Combine spinach and herbs in the steamer basket. Cover, turn down the heat to medium low, and steam for 2 to 3 minutes or until wilted, stirring once. Remove basket carefully; drain. Move spinach to a serving bowl. Drizzle with some of the vinegar. Season to taste with salt and pepper.
  • Pass the remaining vinegar. Garnish with lemon slices, if desired.
  • Makes 4 servings.
