Time 1h40m

Yield 4

Number Of Ingredients 13

11 ounces Greek yogurt
1 pinch salt
3 cups self-rising flour
1 drizzle extra-virgin olive oil
¾ (10 ounce) package frozen chopped spinach, thawed and drained
1 clove garlic, minced
salt and ground black pepper to taste
9 ounces grated halloumi cheese
2 medium scallions, finely chopped
½ teaspoon Italian seasoning
1 tablespoon salted butter, melted
1 tablespoon extra-virgin olive oil
1 medium lemon, cut into wedges

Steps:

  • Place yogurt in a large bowl and stir in salt. Gradually add flour, a few tablespoons at a time, until you have a stiff dough. Turn dough out onto a floured work surface and knead with your hands until soft and slightly tacky. Place the dough in a lightly floured bowl, cover with a clean tea towel, and allow to stand for at least 30 minutes.
  • Meanwhile, warm a frying pan over medium heat. Add a drizzle of oil, then add spinach, garlic, salt, and pepper. Cook and stir, about 5 minutes. Take off of the heat and allow to cool, about 10 minutes. Stir in halloumi, scallions, and Italian seasoning.
  • Divide the dough into 4 equal balls. Roll out each ball into a 10- to 12-inch circle on a floured surface. Place some spinach filling on one side of each circle and fold the dough over. Seal the edges with a fork.
  • Heat a large frying pan over medium-low heat. Combine melted butter and 1 tablespoon oil in a bowl, and brush onto both sides of the gozleme. Cook each gozleme in the hot pan until golden, 3 to 5 minutes per side.
  • Cut each gozleme into 4 slices and finish with several squeezes of lemon juice.

Tips:

  • Use fresh spinach: Fresh spinach has a more vibrant flavor and texture than wilted spinach. If you can't find fresh spinach, you can use frozen spinach, but be sure to thaw it and squeeze out any excess water before using.
  • Choose a good quality halloumi: Halloumi is a semi-hard cheese that is traditionally made from sheep's or goat's milk. It has a slightly salty flavor and a high melting point, making it ideal for grilling or frying. When choosing halloumi, look for a cheese that is firm and white, with a slight yellow tinge.
  • Don't overcrowd the pan: When cooking halloumi, it is important to not overcrowd the pan. This will prevent the halloumi from cooking evenly and will make it more likely to stick to the pan.
  • Use a non-stick pan: A non-stick pan is the best choice for cooking halloumi, as it will prevent the cheese from sticking. If you don't have a non-stick pan, you can use a regular pan, but be sure to grease it well with oil before adding the halloumi.
  • Cook the halloumi over medium heat: Halloumi should be cooked over medium heat. This will help to prevent the cheese from burning and will allow it to cook through evenly.
  • Don't flip the halloumi too often: Once you have added the halloumi to the pan, resist the urge to flip it too often. Flipping the halloumi too often will prevent it from getting a nice golden brown crust.

Conclusion:

Spinach and halloumi salad is a delicious and refreshing dish that is perfect for a light lunch or dinner. The halloumi is crispy and flavorful, while the spinach is fresh and tender. The dressing is light and tangy, and it perfectly complements the other ingredients. This salad is also very easy to make, and it can be tailored to your own taste preferences. For example, you could add other vegetables, such as tomatoes, cucumbers, or bell peppers. You could also use a different type of cheese, such as feta or goat cheese. No matter how you choose to make it, spinach and halloumi salad is a surefire hit.
