Time 30m

Number Of Ingredients 12

10 ounces frozen chopped spinach (,thawed and drained)
14 ounces artichoke hearts (,drained and chopped)
1/4 cup mayonnaise
1/2 cup Parmesan cheese (,finely grated)
3/4 cup Muenster cheese (,shredded)
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground white pepper
1/2 teaspoon fine sea salt
2 sheets puff pastry
2 tablespoons extra virgin olive oil
Parchment paper

Steps:

  • Stir together the artichoke hearts, spinach, mayonnaise, cheeses, onion powder, garlic powder, white pepper, salt. Set aside.
  • Roll out one sheet of the puff pastry. Brush the extra virgin olive oil over the puff pastry sheet. Spread half of the spinach mixture onto the puff pastry sheet leaving a one inch margin on each side.
  • Roll up sheet tightly. Wrap in plastic wrap.
  • Repeat with second puff pastry sheet.
  • Place in freezer for 20-30 minutes. Just long enough for the ingredients to solidify, but not so hard you can't cut through it.
  • Preheat oven to 400°F. Remove rolls from the freezer and cut into 1-inch thick slices (approximately 12 per roll).
  • Place slices onto a rimmed baking sheet lined with parchment paper.
  • Bake for 15 minutes or until puffy and lightly browned. Allow to stand for 3-5 minutes before serving.

SPINACH IN PUFF PASTRY

Spinach in Puff Pastry image

Provided by Ina Garten

Categories     appetizer

Time 50m

Yield 6 servings

Number Of Ingredients 15

4 tablespoons (1/2 stick) unsalted butter
2 cups chopped onions (2 onions)
1 tablespoon chopped garlic (3 cloves)
2 (10-ounce) boxes frozen chopped spinach, defrosted
1/3 cup chopped scallions, white and green parts (2 scallions)
1 cup grated Gruyere cheese
3/4 cup freshly grated Parmesan cheese
4 extra-large eggs, lightly beaten
1 tablespoon dry bread crumbs, plain or seasoned
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
1/4 cup toasted pignoli (pine) nuts
2 sheets (1 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
1 extra-large egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the butter in a saute pan and cook the onions over medium-low heat for 5 to 7 minutes, until tender. Add the garlic and cook for 1 more minute. Meanwhile, squeeze most of the water out of the spinach and place it in a bowl. Add the onion mixture, scallions, Gruyere, Parmesan, eggs, bread crumbs, salt, pepper, nutmeg, and pignolis. Mix well.
  • Unfold one sheet of puff pastry and place it on a baking sheet lined with parchment paper. Spread the spinach mixture in the middle of the pastry, leaving a 1-inch border. Brush the border with the egg wash. Roll out the second piece of puff pastry on a floured board until it's an inch larger in each direction. Place the second sheet of pastry over the spinach and seal the edges, crimping them with a fork. Brush the top with egg wash but don't let it drip down the sides or the pastry won't rise. Make three small slits in the pastry, sprinkle with salt and pepper, and bake for 30 to 40 minutes, until the pastry is lightly browned. Transfer to a cutting board and serve hot.

SPINACH ROLLS WITH PUFF PASTRY

Spinach Rolls with Puff Pastry image

A vegetarian version of mini sausage rolls but made with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.

Categories     Cheese     Appetizer     Bake     Cocktail Party     Basil     Prosciutto     Phyllo/Puff Pastry Dough     Pastry     Bon Appétit

Yield Makes about 30

Number Of Ingredients 5

1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
4 ounces thinly sliced prosciutto
2 tablespoons chopped fresh basil
3/4 cup (packed) finely grated Gruyère cheese (about 2 1/2 ounces)
1 egg, beaten to blend

Steps:

  • Place pastry sheet on work surface. Cut in half, forming two 9 1/2x4 3/4-inch rectangles. Arrange half of prosciutto on 1 rectangle, leaving 1/2-inch border along 1 side. Sprinkle prosciutto with half of basil, then top with half of cheese. Brush plain border with egg glaze. Starting at long side opposite border, roll up pastry jelly-roll style, pressing gently to seal long edges. Wrap in plastic. Repeat with remaining pastry, prosciutto, basil, cheese, and egg to form second log. Refrigerate until firm, at least 3 hours and up to 2 days.
  • Position rack in center of oven and preheat to 400°F. Line 2 large baking sheets with parchment paper. Cut logs crosswise into 1/2-inch-thick rounds. Arrange rounds on prepared sheets, spacing 1 inch apart. Bake 1 sheet at a time until pastries are golden brown, about 16 minutes. Using metal spatula, transfer pastries to racks and cool slightly. Serve warm.

Tips:

  • Use high-quality ingredients for the best flavor. Fresh spinach, creamy Gruyère cheese, and flaky puff pastry are essential.
  • Wilt the spinach properly to remove excess moisture. This will prevent the pinwheels from becoming soggy.
  • Don't overfill the puff pastry sheets. Too much filling will make it difficult to roll and seal the pinwheels.
  • Chill the pinwheels before baking. This will help them hold their shape and prevent them from becoming too puffy.
  • Bake the pinwheels until they are golden brown. This will ensure that the puff pastry is cooked through and the cheese is melted and bubbly.
  • Serve the pinwheels warm or at room temperature. They are a delicious appetizer or snack.

Conclusion:

Spinach Gruyère Puff Pastry Pinwheels are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or simply enjoying at home. With just a few simple ingredients, you can create a dish that is sure to impress your friends and family. So next time you are looking for a quick and tasty treat, give these pinwheels a try. You won't be disappointed!
