4 cups Chili Sans Beans, recipe follows, or your favorite prepared chili
4 Chicago-style hot tamales (or 4 prepared pork, chicken or beef tamales), usually found in the freezer section
12 sport peppers, chopped
1/4 white onion, chopped
4 hot dog buns
1 1/2 cups shredded Manchego
2 small bags corn chips, such as Fritos, crushed
1 teaspoon vegetable oil
1 1/2 pounds ground sirloin
1 pound Mexican-style chorizo,such as El Supremo brand
1 onion, diced
1 to 2 tablespoons chili powder
1 to 2 tablespoons ground cumin
1 teaspoon paprika
Kosher salt and freshly ground black pepper
1 stout beer
1 tablespoon hot sauce
One 14.5-ounce can crushed tomatoes
1 cup chicken stock

Steps:

  • Heat the Chili Sans Beans in a small saucepot until it is simmering, about 5 minutes.
  • Heat up the tamales using a steamer basket set over a pot of simmering water, until they are warmed through, about 10 minutes. (Or follow the package directions of the tamale you use.)
  • In a small bowl, combine the sport peppers and chopped onion.
  • For the sandwich build: Place a sprinkling of the onions and sport peppers along the bottom of the buns. Remove the husks of the tamales. Place the tamales in the buns and top with the Manchego. Then ladle a small amount of chili on top of that! Top with the remaining sport peppers and onions and sprinkle with the corn chips. Take a bite and instantly blog about how surprisingly amazing this combination of ingredients is.
  • In a large Dutch oven, heat the oil over medium heat. Add the beef and chorizo and smoosh down. Start breaking up the chunks with a wooden spoon and let sear until the beef is no longer pink, about 5 minutes.
  • Remove the meat from the pot and leave the fat. Then add the onions, chili powder, cumin, paprika and season with salt and pepper. Cook until the onions are soft, 7 to 8 minutes. Deglaze with the beer. Cook until the alcohol smell subsides, 3 to 4 minutes. Add the hot sauce, tomatoes, stock and the reserved meat. Simmer until thickened, stirring frequently, about 20 minutes. Adjust seasoning.

½ cup orzo pasta
½ cup diced onion
2 cloves garlic, minced
½ cup white rice
2 cups chicken broth
1 cup chopped spinach
½ cup chopped Bulgarian feta cheese

Steps:

  • Melt butter in a skillet over medium-low heat; cook and stir oro in the melted butter until golden brown, 3 to 5 minutes. Stir onion into orzo and cook until translucent, 5 to 10 minutes. Cook and stir garlic into orzo-onion mixture until fragrant, about 1 minute.
  • Mix rice and chicken broth into orzo-onion mixture; bring to a boil. Reduce heat to medium-low, cover skillet, and simmer until rice is tender and liquid is absorbed, 20 to 25 minutes. Remove from heat and stir in spinach and feta. Cover and let stand until spinach is wilted and feta is melted, about 5 minutes. Fluff with a fork.

3/4 teaspoon dried yeast
1/2 teaspoon sugar
1 1/2 cups lukewarm water
2 1/4 cups flour
1/2 teaspoon salt
Olive oil for bowl and brushing dough
1 tablespoon butter
1 onion, finely chopped
3 cloves garlic, minced
8 ounces ground lamb or chuck
1 tomato, peeled, seeded and chopped
1 jalapeno, seeded and finely chopped
1/2 teaspoon kirmizi biber, or combination sweet paprika and cayenne pepper
1/4 cup finely chopped fresh mint
1/4 cup finely chopped fresh parsley
Salt and freshly ground black pepper
Juice of 1 lemon
2 1/2 cups white Turkish cheese or feta cheese, crumbled
2 eggs, lightly beaten
1/4 cup unsalted butter, softened
1/2 cup finely chopped fresh parsley

Steps:

  • Combine the yeast and sugar with a little of the warm water, and set aside until mixture is frothy. Sift the flour and salt into a large bowl, and make a well in the center. Add the yeast mixture, along with the remaining warm water. Using your hands, work the mixture into a dough, adding more water if necessary. Transfer dough to a lightly floured surface and knead until pliable and springy, about 5 minutes. Place dough in an oiled bowl, turning to coat, cover with a damp cloth and let rise in a warm place until dough doubles in size, about 1 hour.
  • Punch down risen dough and knead on a lightly floured surface. Roll into a log and cut into 2 to 3 equal pieces. Roll each piece into a ball, place on floured surface and let rest 30 minutes under a towel.
  • Preheat oven to 450 degrees F, and preheat baking sheets, tiles, or a baking stone.
  • Prepare the filling: Melt the butter in a skillet, add the onion and saute until softened, 5 to 7 minutes. Add the garlic and saute another minute. Transfer onion mixture to a large bowl, add remaining ingredients, and mix thoroughly with your fingertips. If mixture seems too dry, add a teaspoon of water.
  • Place a ball of dough on a floured surface and roll into a round, flat circle, about 1/8-inch thick. Place the round on the oiled, preheated baking sheets or tiles. Brush the top with olive oil and spread with a thin, even layer of the meat filling, leaving a 1/2-inch border around the edge. Repeat with remaining dough and filling.
  • Bake for 12 to 15 minutes. The dough should still be soft enough to roll up.
  • Squeeze a little lemon juice over each of the hot lahmacuns, and serve immediately either flat or rolled up into cones.
  • For the alternative filling: Mix all the filling ingredients in a bowl and blend thoroughly. Spread a thin layer on each circle of dough. Proceed with recipe, but bake for only 6 to 8 minutes.

1 loaf, 24 inches or longer, crusty bread
2 or 3 large cloves garlic, crushed
Extra-virgin olive oil, for drizzling
4 small to medium vine ripe tomatoes
1 lemon, juiced
Coarse salt
4 whole pimento peppers, drained, found in glass jars with Spanish and Mexican foods in market
1 1/4 pounds manchego cheese
2 cups assorted large olives, green and black stuffed or pitted, mixed -- take your pick
3-inch party picks

Steps:

  • Preheat broiler to high.
  • Cut bread in half then slit loaf lengthwise. Char the bread under broiler, then rub with crushed garlic and drizzle with oil. Cut bread into large, bite size cubes and transfer to a basket.
  • Slice tomatoes and arrange on a platter. Dress with lemon juice and salt.
  • Slice pimentos and place in a small serving dish. Slice or cube half of the manchego, leave the remainder whole with a utensil to cut with alongside. Serve on a cutting board. Place olives in a dish near cheese.
  • Use party picks to stack tomatoes and or cheese and olives with bread cubes to pop into your mouth. Bread cubes are tasty with meat and mushroom bites as well.

1 cup uncooked long grain rice
1 1/2 cups low sodium chicken broth or 1 1/2 cups vegetable broth
1/2 cup water
2 tablespoons olive oil
1 tablespoon butter
3/4 cup diced onion
8 ounces sliced mushrooms
3 garlic cloves, minced
2 tablespoons fresh lemon juice
1/2 teaspoon dried oregano or 2 teaspoons minced fresh oregano
6 cups fresh Baby Spinach, washed and spun dry (if you use grown spinach, remove stems and coarsely chop it, too)
fresh ground black pepper, to taste
1 tablespoon dry sherry
4 ounces feta cheese, crumbled

Steps:

  • Over medium heat in a saucepan, combine the rice, broth, and water, and bring to a boil.
  • Cover, reduce the heat to medium low, and let simmer for 15 to 18 minutes or until the rice has absorbed the liquid; transfer to a serving bowl and keep warm.
  • In a skillet over medium heat, melt the olive oil and butter together, then add the onion, mushrooms, and garlic for 5 to 7 minutes, then stir in the lemon juice and oregano.
  • Add the spinach and pepper, then sprinkle with the sherry and toss until the spinach is slightly wilted; remove from heat.
  • Add the crumbled feta and toss until the cheese begins to melt.
  • Add to the cooked rice, toss well, and serve immediately.

This is a great recipe if you like spinach and feta cheese. The times I've made it for other people, they really enjoyed this unusual rice dish. I used white rice in this recipe that was freshly made for the recipe, but I think that leftover rice would work too. I also used Kraft Parmesan cheese, but think that freshly grated Parmesan would be even better.

2 teaspoons butter
3/4 cup onion, chopped
2 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups skim milk
2 cups long-grain rice, cooked
3 ounces feta cheese, crumbled
1 large egg, lightly beaten
2 large egg whites
10 ounces frozen chopped spinach, thawed and drained
olive oil flavored cooking spray
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in a large skillet over medium heat.
  • Add chopped onion and saute for 3 minutes.
  • Stir in flour, salt and pepper.
