1 tablespoon vegetable oil
1 onion, chopped
1 (14.75 ounce) can creamed corn
1 tablespoon curry paste
salt to taste

  • In a large wok or skillet heat oil over medium heat; saute onions until translucent. Stir in creamed corn and curry paste. Cook, stirring regularly, for 5 minutes. As you stir, add salt, pepper and garlic.

8 cups baby spinach leaves
2 (15-ounce) cans diced tomatoes
2 teaspoons ground coriander
2 teaspoons ground cumin

Steps:

  • In large bowl, combine chickpeas and enough cold water to cover by two inches. Cover and refrigerate 8 hours or overnight.
  • Drain chickpeas, then combine in slow cooker with 1 cup water. Cover and cook on high, stirring occasionally, until just tender, 3 to 4 hours. Add spinach, tomatoes and their juices, coriander, cumin, garam masala, turmeric, 1 1/2 teaspoons salt, and pepper. Reduce heat to low and cook 1 hour more. 3 tablespoons vegetable oil
2 garlic cloves
1 onion, roughly chopped
2 tablespoons medium indian curry paste
1 tablespoon black mustard seeds
1 lb potato, cut into small cubes
1 lb frozen leaf spinach, thawed
1 (14 ounce) can chickpeas, drained
8 ounces paneer cheese, cubed (can substitute halloumi cheese)
1 tablespoon lime juice
salt and pepper
fresh cilantro, to garnish

Steps:

  • In a large heavy-based saucepan, heat the oil over medium heat and then add the garlic and onion.
  • Cook, stirring frequently, for about 5 minutes or until the onion begins to soften.
  • Add the curry paste and mustard seeds, stir to mix, and cook a further minute.
  • Add the potatoes with 2 cups water, bring to the boil, then reduce heat and simmer gently, uncovered, for around 20 minutes or until the potatoes are almost tender and most of the water has evaporated - it is a good idea to stir occasionally.
  • While the potatoes are cooking, press as much liquid as possible out of the spinach through a sieve, then chop roughly.
  • Add the chickpeas and spinach to the potato mixture.
  • Cook for a further five minutes, until the potatoes are tender, stirring frequently to prevent the mixture from sticking to the bottom of the pan.
  • It may be necessary to add a splash more water, but take care the mixture does not become too wet.
  • Stir in the paneer cheese and lime juice, and heat through gently.
  • Season with salt and pepper to taste, and serve garnished with chopped cilantro.

4 cups cooked long-grain brown rice
3 tablespoons canola oil
1 (14 ounce) can whole canned tomatoes
2 cups diced onions
2 teaspoons mustard seeds
5 garlic cloves, minced
1 tablespoon ginger
3 teaspoons curry powder
1 teaspoon coriander
1/4 teaspoon ground cloves
1/2 teaspoon cinnamon
1/4 teaspoon ground cardamom

10 cups fresh spinach, chopped

Steps:

  • Heat the oil in a large skillet over medium-high heat. While the oil is heating, pour the tomatoes and juice into a bowl. Squeeze the juice out of the tomatoes and tear into small pieces with your hands. Save 1/2 cup of the juice for later.
  • When the oil is hot, add the mustard seeds and let them heat until they start to pop, shaking the pan to keep them coated in the oil. You'll want to put a lid on the pan to keep them from jumping out.
  • After they've been popping for about a minute, add the onion and sauté for about 8 minutes, stirring frequently. The onion will start to brown as it begins to caramelize. Add the garlic and sauté for another minute. Add the spices, salt, and 1/2 cup of the tomato juices and stir until well combined.
  • Turn the heat down to medium and add the chopped spinach, one handful at a time, stirring until the leaves wilt and the spinach is mixed in well with the spices. Continue adding handfuls and mixing, until all 10 cups of spinach are used. Add the chickpeas and tomatoes, cover, and simmer on medium heat for about 3 minutes. Stir and turn the heat down a bit to medium-low. Simmer for about 7 more minutes, stirring occasionally. Adjust the spices if needed and serve warm over brown rice.

2 fresh tomatoes, quartered
1/2 inch cube fresh ginger, cut in half
1 fresh green chile (optional)
3 tablespoons grapeseed oil (or any other light oil such as canola)
1/4 teaspoon asafoetida powder (optional)
1 teaspoon whole cumin seed
3 cups fresh spinach, chopped
1 (14 ounce) can chickpeas (14 or 15 oz can, won't matter much)
1/4-1/2 cup water
1 tablespoon ground coriander
1/2 teaspoon ground chili powder
1/2 teaspoon turmeric
1 teaspoon sea salt (or to taste)
1/2 teaspoon garam masala
fresh cilantro, chopped fine (optional)

Steps:

  • Pull out your blender, a small one if you have it, and combine the tomatoes, the ginger and the fresh chili if you are using. Puree until completely smooth the set aside.
  • In a medium sized saute pan over medium heat, add the oil. Once the oil is hot add in the asofetida followed by the whole cumin seeds. Stir - and once the spices are sizzling, add in the tomato mixture. Be careful, it will splatter. Mix to combine - it takes quite a few stirs to get it combined so don't worry. Let that saute a few minutes.
  • Add the next three spices, (coriander, chili powder & turmeric) as well as the salt. Mix that together and let it all mingle together over medium low heat for about 10 minutes. It will reduce down a bit and the colour will begin to get darker.
  • Add in the fresh chopped spinach, followed by about 1/4 cup of water. Add up to 1/2 cup of water if you wish. Let that cook another few minutes and then add your chickpeas. You can mash some of the chickpeas with the back of a spoon if you like, it makes the gravy thicker.
  • The last ingredient is the garam masala, add it in and simmer for a few more minutes before serving. Garnish with fresh chopped cilantro if you like. That's it!
