SPINACH & CASHEW PESTO

Spinach & Cashew Pesto image

I couldn't find fresh basil at my local grocery store...and, pine nuts were $25.00 per pound! So, I improvised and used spinach and roasted cashew nuts instead. Even my husband loved this recipe (he had no idea there was spinach in it!)

Time 30m

Number Of Ingredients 7

5 c fresh baby spinach
6 clove garlic
1/4 c cashews (salted or unsalted)
4 tsp olive oil
1/2 c chicken broth or water
1/2 tsp ground black pepper
1/4 c parmesean or asiago cheese, grated

Steps:

  • 1. Put spinach, chopped garlic cloves, cashews, olive oil, chicken broth (or water), and ground black pepper in a food processor.
  • 2. Pulse all ingredients until smooth. Add water if necessary to bring to desired consistency. Transfer to a small pot and simmer over medium heat, stirring often, until the garlic is cooked (about 5 minutes). Toss pesto sauce with cooked linguine or your choice of pasta. Sprinkle grated parmesean or asiago cheese on top.

Tips:

  • For a creamier pesto, use a food processor instead of a blender. You can also add a little bit of water or olive oil to achieve the desired consistency.
  • If you don't have any pine nuts on hand, you can substitute walnuts or almonds. Just be sure to toast them first to bring out their flavor.
  • Feel free to experiment with different cheeses in your pesto. Parmesan, pecorino, and asiago are all great options. You could also try a soft cheese like ricotta or goat cheese for a creamier texture.
  • Spinach pesto is a great way to sneak some extra vegetables into your diet. It can be used as a dip for vegetables, spread on sandwiches or wraps, or tossed with pasta or rice.
  • Pesto can be frozen for up to 3 months. Simply spoon it into ice cube trays and freeze until solid. When you're ready to use it, just pop a few cubes into a bowl and let them thaw at room temperature.

Conclusion:

Spinach cashew pesto is a delicious and versatile sauce that can be used in a variety of dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy way to add some flavor to your meal, give spinach cashew pesto a try.
