BROWNIES (WITH CARROT AND SPINACH)

Brownies (With Carrot and Spinach) image

Created by Jessica Seinfeld From the book Deceptively Delicious These brownies fool everyone! You won't believe how scrumptious they are (or how good they are for you) until you make them yourself. Just don't serve them warm-it's not until they're completely cool that the spinach flavor totally disappears.

Tips:

  • To ensure the brownies have a fudgy texture, use a combination of melted butter and coconut oil.
  • Make sure to blend the spinach and carrots until they are very smooth. This will help to incorporate them evenly into the batter.
  • For a more intense chocolate flavor, use dark chocolate chips or cocoa powder.
  • If you don't have almond flour, you can use regular all-purpose flour. However, the brownies may be slightly less dense.
  • These brownies are best served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
