8 ounces bowtie pasta noodles
4 cups spinach leaves
½ cup craisins
⅓ cup pine nuts (or cashews)
1 4-ounce can mandarin oranges (drained)
¼ cup cilantro leaves (roughly chopped)
⅓ cup teriyaki sauce ((the thicker, the better!))
⅓ cup rice wine vinegar ((may sub apple cider vinegar))
½ teaspoon garlic powder
½ teaspoon onion powder ((if you have it))
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon sugar
½ cup oil ((such as vegetable oil, canola oil, olive oil))

Steps:

  • Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
  • While pasta is boiling, prepare the dressing. In a jar combine all dressing ingredients. Cover and shake to combine. Chill until ready to use.

1 (6 ounce) package spinach leaves
2 cups fresh basil leaves
½ cup extra virgin olive oil
3 cloves garlic, minced
4 ounces prosciutto, diced
salt and ground black pepper to taste
¾ cup freshly grated Parmesan cheese
½ cup toasted pine nuts

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. 10 ounces baby spinach, rinsed and torn into bite-size piece
2 ounces crumbled feta cheese with basil and tomato
1 red onion, chopped
1 (15 ounce) can black olives, drained and chopped
1 cup Italian-style salad dressing
4 cloves garlic, minced
1 lemon, juiced
½ teaspoon garlic salt
½ teaspoon ground black pepper

16 oz package bowtie dry pasta
1 pkg baby spinach leaves
1/2 c vegetable oil
16 oz blue cheese crumbles
1 pt cherry tomatoes
1 bottle white wine vinegar -1/2 cup
Add Salt to taste
1 tsp garlic powder with parsley
16 oz shredded parmesan -1 cup

  • 1. Cook pasta according to pkage Directions,adding a splash of oil to pot of salted water Aldente is suggestd for this recipe.
  • 2. Drain Pasta. Rince with Cold Water. Set aside. In the bottom of a resealable container,mix Oil,Garlic Salt,and white wine vinegar. Stir well until somewhat combined.
  • 3. Add Pasta and Stir to coat pasta fully. Add Tomatoes, a handful Blue Cheese crumbles,Shredded Parmesan,and dry Spinach leaves. Toss well!

1 package fresh mushroom or chicken prosciutto or spinach filled tortellini (recommended: Contadina or Buitoni brands) available on dairy aisle in most markets
1/2 pound fresh baby spinach
1 (15-ounce) can baby artichoke hearts in water, drained and chopped
1 red roasted pepper, drained and chopped
1/2 small red onion, chopped
1 clove garlic, cracked from skin
1 lemon, zested
2 teaspoons lemon juice, the juice of 1 wedge
2 tablespoons red wine vinegar, a couple of splashes
1/4 cup extra-virgin olive oil
1 tablespoon fresh thyme leaves, chopped or 1/2 teaspoon dried leaves, eyeball it
Black pepper
A handful sun-dried tomatoes packed in oil, coarsely chopped

Steps:

  • Bring 5 or 6 inches of water to a boil in a large pot. Salt boiling water and add pasta. Cook for 3 to 4 minutes, until pasta is just tender and the tortellini are floating like buoys. Drain tortellini, then cool the cooked pasta by spreading them out on a large plate or a cookie sheet in a single layer.
  • Coarsely chop baby spinach. Combine with artichoke pieces, roasted red pepper and red onion. Chop garlic, then add salt to it and mash it into a paste with the flat of your knife. Transfer garlic paste to a small bowl and add lemon zest, lemon juice and vinegar to it. Whisk in oil, thyme and pepper. Add pasta and sun-dried tomatoes to the salad. Dress salad and gently toss. Serve or refrigerate.
