SPINACH SALAD WITH RED AND CHIOGGIA BEETS, QUINOA AND WALNUTS

Spinach Salad With Red and Chioggia Beets, Quinoa and Walnuts image

This is one of those salads where the grain enhances texture, adds a nutritional punch, but isn't what the salad is about. It's about beets and spinach. I usually slice beets for salads, or cut them into wedges. Buthere I cut them into very small dice, so the quinoa/beets/walnuts/blue cheese mixture comes together in particularly appealing bites.

Tips:

  • Choose fresh and tender ingredients: The better the quality of your ingredients, the better your salad will taste. Look for young, tender spinach and beets, and walnuts that are plump and flavorful.
  • Wash your greens thoroughly: This will remove any dirt or grit that may be clinging to the leaves. You can use a salad spinner to make this task easier.
  • Roast your beets ahead of time: This will save you time when you're assembling the salad. You can roast the beets in the oven or on a grill.
  • Don't overcook your beets: Beets should be tender but still have a slight crunch to them. Overcooked beets will be mushy and flavorless.
  • Use a variety of textures: The combination of crunchy walnuts, tender beets, and slightly wilted spinach creates a salad that is both interesting and delicious.
  • Don't be afraid to experiment with different dressings: The dressing in this recipe is a simple vinaigrette, but you could also try a creamy dressing or a citrus-based dressing.

Conclusion:

This spinach, beet, and walnut salad is a delicious and healthy way to enjoy these seasonal vegetables. It's packed with nutrients and antioxidants, and it's a great source of fiber. The salad is also very versatile, so you can easily customize it to your own taste. Whether you're looking for a light lunch or a hearty dinner, this salad is sure to please.
