Steps:

1 (16 ounce) package bow tie pasta
1 (6 ounce) package spinach leaves
2 cups fresh basil leaves
½ cup extra virgin olive oil
3 cloves garlic, minced
4 ounces prosciutto, diced
salt and ground black pepper to taste
¾ cup freshly grated Parmesan cheese
½ cup toasted pine nuts

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Rinse with cold water to cool. Drain well in a colander set in the sink.

2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

1 1/4 cups pine nuts, toasted (about 6 1/2 oz.)
1/2 beaten egg 2 t. minced shallot (or green onion)
3/4 teaspoon fresh lemon juice
1/2 cup olive oil
3 tablespoons balsamic vinegar (or red wine vinegar)
salt & freshly ground black pepper
1 1/4 lbs spinach, stemmed
1 small bunch basil, stemmed
3 tablespoons water (optional)
4 ounces piece parmesan cheese, cut into shavings with a vegetable peeler

Steps:

  • Dressing:.
  • Puree 1/2 cup pine nuts in processor; add egg, shallot and lemon juice and puree.
  • Gradually add oil and vinegar alternately through feed tube and blend until smooth; season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate.).

  • Toss spinach and basil in large bowl .

1 whole egg
1 large shallot, minced
1/4 ounce lemon juice
3 ounces balsamic vinegar

20 ounces spinach
96 basil leaves
4 ounces shaved aged provolone cheese or 4 ounces good parmesan cheese
4 ounces toasted pine nuts

Steps:

  • Dressing-Put pine nut in a food processor add whole egg,shallots, and lemon juice,Puree.
  • Slowly add oil in a stream alternate with vinegar till all is incorporated.
  • Season with salt and pepper to taste.

¼ cup white sugar
1 (3 ounce) jar bacon bits

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes.
