SPICY, GARLICKY MEATLOAF

Spicy, Garlicky Meatloaf image

This meatloaf is as pungent and zesty as a meatball, but baked in that iconic, sliceable loaf form. A combination of chilies and sage add a spicy, earthy note, and a glaze of tomato paste and olive oil elevates a traditional dish away from its ketchup roots. The pine nuts are a visual cue: this is something a little different. And it tastes great the day after.

1/4 cup extra-virgin olive oil
4 garlic cloves, thinly sliced
2 pounds baby spinach
Coarse salt and freshly ground pepper
1/2 lemon
1/4 cup pine nuts, toasted

Steps:

  • Heat 1 tablespoon oil and 1 garlic clove in a 12-inch straight-sided skillet over medium-high heat, until garlic is golden, about 3 minutes. • Transfer spinach to a bowl. Season with salt and pepper. Squeeze lemon over spinach, and top with pine nuts.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready to go. This will help you stay organized and ensure that you don't forget anything.
  • Use Fresh Ingredients: Fresh ingredients will give your meatloaf the best flavor. If possible, use organic ingredients to avoid pesticides and other chemicals.
  • Don't Overmix the Meatloaf: Overmixing the meatloaf can make it tough. Mix the ingredients just until they are combined.
  • Use a Meatloaf Pan: A meatloaf pan will help the meatloaf cook evenly and prevent it from falling apart.
  • Cook the Meatloaf to the Correct Temperature: The internal temperature of the meatloaf should reach 160°F (71°C) for medium-rare, 165°F (74°C) for medium, or 170°F (77°C) for well-done.
  • Let the Meatloaf Rest Before Slicing: Let the meatloaf rest for 10-15 minutes before slicing. This will help the juices redistribute throughout the meatloaf and make it easier to slice.

Conclusion:

Spinach and pine nut meatloaf is a delicious and healthy dish that is perfect for a weeknight meal. It is made with ground beef, spinach, pine nuts, and a variety of spices. The meatloaf is baked in the oven until it is cooked through. Serve the meatloaf with mashed potatoes, roasted vegetables, or a salad.
