3 tablespoons olive oil
2 cloves garlic, thinly sliced
Juice and zest of 1 lemon
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 ounces baby spinach leaves
1 pound cooked orzo
1 cup pitted Kalamata olives, roughly chopped
4 ounces chopped feta or haloumi cheese
1/4 cup thinly sliced red onion
1/4 cup finely chopped fresh mint leaves

Steps:

  • In a small pan, warm oil over medium-low heat. Sauté garlic until lightly golden, 1 to 2 minutes. Transfer garlic and whatever oil remains in the pan to a bowl. Add 3 tablespoons juice, 2 teaspoons zest, salt and pepper; whisk to combine. Add spinach and toss lightly. Add orzo, olives, cheese, onion and mint. Toss to combine; serve.

1/3 cup balsamic vinegar
2 fresh garlic cloves, finely chopped
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
1 lb orzo pasta, cooked until al dente and cooled
15 kalamata olives, pitted and sliced
1/2 cup red onion, diced
1/2 cup celery, diced
2 stalks green onions, thinly sliced
8 ounces fresh spinach, roughly chopped
1/2 cup pine nuts, toasted
6 ounces feta cheese, cubed

Steps:

  • Whisk the vinegar, garlic, and pepper together. Slowly add olive oil until it begins to thicken and set aside.
  • In a mixing bowl toss pasta, olives, onions, celery, spinach, nuts, and feta cheese until fully combined.

1/2 c olive oil, extra virgin
3 Tbsp white wine vinegar
3 Tbsp lemon juice, fresh
1 tsp coarse ground black pepper
1 tsp Dijon mustard
1 small garlic clove, minced
1 pinch dried thyme
1/2 tsp dried oregano
1/4 tsp ground cumin
3 oz fresh spinach leaves, washed and torn into bite-size pieces
1 red bell peppper, chopped
1/2 c Kalamata olives, pitted and sliced
1/2 c scallions, minced
2 tsp capers, rinsed and drained
3 Tbsp Feta cheese, crumbled
3 Tbsp pine nuts, toasted

Steps:

  • 1. Cook orzo 8 to 10 minutes or al dente. Rinse briefly in cold water, drain and add to a large bowl.
  • 2. Toss with 1 tablespoon olive oil.
