Provided by á-160091

Number Of Ingredients 8

3 cups fresh baby spinach
1 3/4 cups fresh mushrooms, sliced
3 green onions, sliced
2 tablespoons pecans, chopped
1 1/2 teaspoons olive oil
4 (4 ounce) boneless skinless chicken breast halves
1/2 teaspoon rotisserie chicken seasoning
2 slices reduced-fat provolone cheese, halved

Steps:

  • In a large skillet, sauté the spinach, mushrooms, onions and pecans in oil until mushrooms are tender. Set aside and keep warm. Sprinkle chicken with seasoning. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 inches from the heat for 4 to 5 minutes on each side or until a meat thermometer reads 170°F. Top with cheese. Cover and grill 2 to 3 minutes longer or until cheese is melted. To serve, top each chicken breast with reserved spinach mixture.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use Fresh Spinach: Fresh spinach has a more vibrant flavor and texture than frozen spinach. If you can, use fresh spinach for the best results.
  • Don't Overcook the Chicken: Overcooked chicken can be dry and tough. Cook the chicken until it is cooked through but still tender and juicy.
  • Use a Non-Stick Skillet: A non-stick skillet will help prevent the chicken and vegetables from sticking to the pan.
  • Season to Taste: Be sure to taste the sauce and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
  • Serve Immediately: This dish is best served immediately after it is cooked. The chicken will be most tender and juicy, and the sauce will be flavorful and creamy.

Conclusion:

Spinach and mushroom smothered chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, the vegetables are flavorful, and the sauce is creamy and rich. This dish is sure to please everyone at the table.
