SPINACH AND MANGO SALAD

An out of this world salad that will have your dinner guests begging for the recipe. It is also versatile - summer berries are a nice alternative. I wouldn't normally tout a brand, but the only company I know that makes maple flavored balsamic vinegar is Wildly Delicious in their distinct tall blue bottles.

SPINACH AND MANGO SUBSTITUTE SALAD

Spinach and Mango Substitute Salad image

This recipe evolved from recipe #35547. The second time I wanted to make that recipe, I had nothing but the spinach leaves so I started substituting everything. The result was very well received, so I thought I would share it. I estimated the amounts so it might need a little tweaking. Bon Appetit.

SPINACH SALAD WITH MANGO AND CANDIED PECANS

Yield Makes 4 servings

Number Of Ingredients 7

Nonstick vegetable oil spray
1/4 cup (packed) golden brown sugar
6 tablespoons olive oil
3 tablespoons balsamic vinegar
1 cup pecan halves
1 6-ounce bag baby spinach leaves
1 large mango, peeled, pitted, cut into thin wedges

Steps:

  • Spray sheet of foil with nonstick spray. Stir sugar, 1 tablespoon oil and 1 tablespoon vinegar in heavy medium skillet over medium heat until sugar melts and syrup bubbles, about 3 minutes. Mix in pecans. Stir until nuts are toasted and syrup coats nuts evenly, about 7 minutes. Turn nuts out onto prepared foil. Using fork, separate nuts and cool completely (coating will harden).
  • Combine spinach, mango and cooled pecans in large bowl. Whisk remaining 5 tablespoons oil and 2 tablespoons vinegar in small bowl to blend. Season dressing with salt and pepper. Toss salad with enough dressing to coat.

Tips:

  • Choose ripe and sweet mangoes. This will ensure that your salad is flavorful and delicious.
  • Use fresh spinach leaves. Baby spinach leaves are a good option as they are tender and have a mild flavor.
  • Add some crunch to your salad. Nuts and seeds are a great way to do this. Almonds, walnuts, pecans, and sunflower seeds are all good options.
  • Don't be afraid to experiment with different dressings. A simple vinaigrette is a good option, but you could also try a creamy dressing or a tangy citrus dressing.
  • Serve your salad immediately. This will prevent the spinach leaves from wilting.

Conclusion:

Spinach and mango salad is a refreshing and healthy dish that is perfect for a light lunch or dinner. It is packed with nutrients and is a good source of vitamins A, C, and K. The combination of spinach and mango is delicious and unique, and the salad is sure to please everyone at your table.
