1/3 cup walnut pieces
2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
salt & freshly ground black pepper
5 ounces baby spinach leaves (about 5 cups lightly packed)
1 granny smith apple

Steps:

  • 1/3 cup walnut pieces, toasted in a dry skillet over a medium-high flame until fragrant, about 2 minutes.
  • In a small bowl whisk together the oil, vinegar and mustard.
  • Season with salt and pepper to taste.

  • Core the apple and slice it into matchsticks.
  • Sprinkle a quarter of the apple pieces on top of each salad.
  • Follow with the walnut pieces.
  • Serve immediately.

Tips:

  • Utilize fresh and crisp ingredients: For the best flavor and texture, choose fresh, crisp spinach and Granny Smith apples. Look for spinach that is deep green and blemish-free, and apples that are firm and brightly colored.
  • Slice apples thinly: Thinly slicing the apples will help them blend better with the other ingredients and make them easier to eat.
  • Don't overdress the salad: A light vinaigrette dressing is all that is needed to enhance the flavors of the spinach and apples without overpowering them.
  • Add nuts or seeds for extra crunch: If you like, you can add a handful of chopped walnuts, pecans, or sunflower seeds to the salad for extra crunch and flavor.
  • Serve immediately: This salad is best enjoyed immediately after making it, as the spinach and apples will start to wilt if they sit for too long.

This spinach and green apple salad is a delicious and refreshing dish that is perfect for a light lunch or dinner. It is packed with nutrients and antioxidants, and it is also low in calories and carbohydrates, making it a great choice for people with diabetes.
