1/2 cup pine nuts
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon olive oil
2 yellow onions, diced
2 garlic cloves, minced
Three 20-ounce bags frozen chopped spinach, thawed and squeezed of excess water
4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon freshly ground black pepper
2 teaspoons kosher salt
Pinch nutmeg
8 sheets frozen phyllo dough, thawed
3 tablespoon unsalted butter, melted
2 teaspoons za'atar (if you can't find za'atar, use sesame seeds)

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. 1 onion, chopped
½ pound fresh mushrooms, sliced
3 tablespoons vegetable oil
2 cups ricotta cheese
2 tablespoons dried basil
2 eggs
1 cup feta cheese
¾ cup butter, melted
1 (16 ounce) package phyllo dough

Steps:

  • Steam the spinach until just wilted.
  • In a medium skillet heat the oil until hot and saute the onions and mushrooms. Stir together with the spinach.
  • In a medium bowl, beat the eggs well. Stir in the ricotta, feta, and basil.
  • Butter a deep dish pie pan. Place a sheet of phyllo on the bottom of the pan, and brush melted butter over the sheet. Repeat until there are 5 or 6 sheets in the pan. Spread the ricotta mixture over the phyllo. Layer 5 or 6 more sheets of filo brushed with butter on top of the cheese. Spread spinach mixture over the phyllo. 13 ounces chicken breasts (may use left over cooked chicken as well as fresh)
1 1/2 cups shredded swiss cheese
1 chopped onion
1 1/4 cups Bisquick
1 3/4 cups milk
4 eggs
1/2 teaspoon salt
1 (300 g) package frozen spinach, thawed and drained

Steps:

  • Boil enough water to cover chicken breast.
  • Place chicken in water; cover and remove from heat.
  • Let sit for 10 minutes.
  • In greased 13x9 inch baking dish or 2 pie pans, combine spinch, chopped chicken, shredded swiss cheese, and onion.
  • In bowl or blender, mix together Bisquick, milk, eggs, and salt.

10 ounces frozen spinach, thawed and squeezed dry (or 6 cups fresh, steamed)
6 ounces feta cheese, crumbled
1 small onion, minced
1 cup small curd cottage cheese
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
2 teaspoons dried dill
1/2 teaspoon salt
3 eggs, beaten
1 tablespoon margarine or 1 tablespoon butter, softened
1/2 margarine or 1/2 butter, melted
8 ounces packages filo pastry, thawed

Steps:

  • Mix spinach, feta, cottage cheese, onion, parsley, dill and salt.
  • Add beaten agges and combine well.
  • Brush bottom and sides of a 9x13 baking dish with the softened butter.
  • Unfold the filo leaves and cut in half, crosswise.
  • Wrap and refreeze one half of the filo.
  • Cover the other half of the filo with a damp towel.
  • Gently separate one filo leaf from the stack.
  • Place it in the baking dish and fold over the edges to fit the bottom of the dish.
  • Brush the entire surface of the filo lightly with melted butter.
  • Repeat steps 7-9 until you have used half of the filo leaves.
  • Preheat the oven to 350.
  • Spread the spinach mixture evenly over the filo in the dish.
  • Layer the remaining filo over the spinach mixture in the same manner as the first half of the filo.
  • Cut through the top layers of the filo leaves with a sharp knife, making a diamond pattern (this will make it easier to cut the spanakopita later).

  • 01.For the pastry, mix the flour, polenta and a pinch of salt in a food processor. Add the cold butter and pulse until the mixture resembles breadcrumbs. Tip into a bowl, add 50g of the grated Parmesan and mix with a table knife until the mixture comes together. Measure out 4 tbsp cold water and add a little at a time until the dough just sticks together (you may not need all the water). Knead it gently until it forms a ball, wrap the pastry in cling film and chill for 20 minutes in the fridge. 02.Meanwhile, preheat the oven to 200°C/fan180°C/gas 6. Scatter the sliced butternut squash over 2 or 3 large roasting trays, drizzle with half the olive oil, scatter over the cumin seeds, ras el hanout and chilli flakes, and season well with salt and black pepper. Roast in the oven, stirring occasionally, for 40 minutes. 03.Meanwhile, add the sliced onions and garlic to another roasting tin with the rest of the olive oil. Halfway through cooking the squash, add the onions to the oven and roast for 20 minutes. Remove the squash and onions from the oven, squeeze out the garlic from their skins, mash the roasted garlic into the onions and leave to cool slightly. 04.Place the spinach in a colander over the sink and pour over a kettle of boiling water. Refresh under cold water, then squeeze dry to remove all the excess water. Chop the spinach, put into a bowl, season and mix with the ricotta, then set aside. 05.On a lightly floured surface, roll out two-thirds of the pastry and use it to line the base and sides of a 23cm springform tin. Add half the spinach mixture in a layer, then distribute half the roasted squash on top of that. Scatter with half the pine nuts, then half the goat's cheese. Repeat with the rest of the spinach mixture, butternut squash, pine nuts and goat's cheese. Finally, add the garlicky onions in a layer on top. 06.On a lightly floured surface, roll out the rest of the pastry, then lay on top of the pie, pushing in the edges to seal well. Make a hole in the middle of the pie and decorate the top with leaves made from any leftover pastry. Brush the top of the pie with beaten egg, scatter with the rest of the Parmesan and chill for 20 minutes. 07.Cover with cling film and foil and freeze, uncooked, for up to 1 month. 08.When ready to eat, remove the foil and cling film and defrost fully in the fridge. Preheat the oven to 200°C/fan180°C/gas 6 and bake for 30-35 minutes until the pastry is golden brown on top. Leave to cool in the tin for 10 minutes before serving.

3 -4 tablespoons chopped fresh fennel
1 large onion, finely sliced
300 gr. white feta cheese
3 eggs, slightly beaten
500 gr. fyllo pastry dough (The fyllo pastry is widely available ready-made)
4 tablespoons olive oil
salt and pepper
110 gr. melted butter
5 tablespoons finely chopped parsley

Steps:

  • Clean and rinse the spinach, drain well, squeezing it gently by hand.
  • Sautee the onion in the olive oil.
  • Shred the spinach roughly and add it to the onion.
  • Stir over medium heat to get it all coated in the olive oil. Do not add any water. Cover and cook gently for 5-6 minutes.
