Tips:

  • Use fresh, tender spinach. Wilted or yellowed spinach will not yield a vibrant, flavorful pesto.
  • Blanch the spinach before using it. This will help to remove some of the bitterness and preserve its bright green color.
  • Use a variety of nuts. Almonds are a classic choice for pesto, but you can also use pine nuts, walnuts, or pecans.
  • Don't over-process the pesto. A few pulses in a food processor or blender is all you need to combine the ingredients.
  • Taste the pesto and adjust the seasonings as needed. You may want to add more salt, pepper, or lemon juice to taste.
  • Use pesto immediately or store it in an airtight container in the refrigerator for up to 5 days. You can also freeze pesto for up to 3 months.

Spinach almond pesto is a delicious and versatile condiment that can be used in a variety of dishes. It's perfect for tossing with pasta, spreading on sandwiches or wraps, or using as a dip for vegetables or crackers.
