QUICK SPINACH AND ALFREDO PIZZA
I had this pizza at Cici's for this first time and it was delish! This is a quick and easy replication of that pizza. This would also be good topped with ham or bacon as well!

SPINACH ALFREDO PIZZA
This recipe is an Alfredo sauce fan's dream! The sauce works perfectly on the pizza, but is so good that it would be great served over pasta as well. As a variation, try adding herbs - such as rosemary or oregano - to the pizza dough!

Steps:
- 1. PIZZA DOUGH: Warm medium bowl by swirling some hot water in it; Drain. Place yeast in bowl & pour on warm water. Mix in sugar with fork; let stand until yeast has dissolved & starts to foam, 5 - 10 minutes.
- 2. Use wooden spoon to mix in salt and about one-third of flour. Mix in another third of the flour, stirring with the spoon until the dough forms a mass and begins to pull away from the sides of the bowl.
- 3. Knead 8-10 mins on floured board, working in remaining flour a little at a time. Dough should be elastic and smooth; Form into a ball.
- 4. Place dough in lightly oiled mixing bowl, rotating it to grease dough's surface. Cover bowl with moist towel; let stand in warm place until dough has doubled, about 40-50. (To test if risen enough, poke two fingers into dough. If indentations remain, the dough is ready.
- 5. Punch dough with your fist to release air. Knead for 1 to 2 minutes, then divide into two balls. Pat into flat circles on a lightly floured surface. Roll to 1/4 inch larger than size of the pan for the rim of the crust.
- 6. Place in a lightly oiled pan, folding extra dough under to make a thicker rim around the edge; brush on a light coating of olive oil.
- 7. Preheat oven to 350 degrees F. Gently melt butter in a small sauce pan and remove from heat. Stir in Parmesan and cream. Return to heat and bring just to boil at a lowest setting - stirring frequently. Stir in spinach. Add salt and garlic to taste.
- 8. Spoon the Alfredo and spinach onto crusts. Top with shredded mozzarella and additional Parmesan. Bake pizzas individually for 20 minutes or until bottom is nicely browned.

CHICKEN & SPINACH ALFREDO PIZZA
This is my favorite homemade pizza; these are the basic toppings though I vary sometimes depending on what's on hand. I make the dough in my bread machine and add a little garlic powder and basil or italian seasonings to the dough ingredients for extra flavor. Some measurements are approximate.

SPINACH ARTICHOKE AND MUSHROOM ALFREDO PIZZA
I fell in love with the alfredo artichoke pizza at Artichoke downtown and wanted to make a less expensive and less rich version at home since I like experimenting with tomato-free pizzas. I like using Recipe #453818 or Recipe #31072 to make little 8" crusts but I made a 12" version of the Sicilian dough with this pizza to have dinner ready for 2 days. I made some alfredo sauce with soymilk, dairy butter, and a packet of Simply Organic alfredo sauce mix and used that along with some fresh mushrooms and canned artichoke pieces that I rinsed. Just use whatever you have on hand or floats your boat, it'll be delicious no matter what! All the following measurements are completely approximate; it's more to give you an idea of what to use on your pizza to get this exquisite flavor that is a different kind of blonde/white pizza.

NIKKI'S CHICKEN AND SPINACH ALFREDO PIZZA
I was really craving some pizza and had always wanted to try my hand at alfredo pizza. So after some playing around came up with this. My mother-n-law said it was the best pizza she's ever had and that's really saying something to get a complement from her like that! My husband backed her up and he's extremely picky! lol Hope you enjoy and let me know what you think. NOTE: It may look like a lot of stuff but if you do it stages, it really isn't, such as using left over chicken and making the sauce ahead of time and just setting it to the side til you need it.

SPINACH ARTICHOKE ALFREDO PIZZA
This recipe makes one pizza heavy on toppings or two pizzas lighter on the toppings, whichever you prefer.

Steps:
- 1. Preheat oven to 425° if you're using homemade dough. If you're using the stuff that comes in a tube, follow the cooking instructions on the label.
- 2. In a medium saucepan over low heat, stir together the cream, butter, and cream cheese until fully melted.
- 3. Stir in the parmesan cheese and garlic powder. Continue to cook and stir for 15 minutes.
- 4. Meanwhile, place spinach in a saute pan with a tablespoon of water over medium high heat and saute until wilted.
- 5. Once spinach is fully wilted, place it onto a clean kitchen towel and wring out all of the liquid by twisting the towel into a ball with the spinach inside. Once you've squeezed out all of the liquid, add it to the sauce.
- 6. Spread the sauce over the pizza crust. You might have some left over for dipping depending on how saucy you like your pizza.
- 7. Place artichoke pieces over sauce then top with mozzarella cheese.
- 8. Bake for 15 minutes or until you start to see the cheese browning. Let sit 5 minutes before slicing.
Tips:
- Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach. If you're using frozen spinach, be sure to thaw it and squeeze out any excess water before using.
- Cook the spinach properly: Spinach should be cooked until it is just wilted. Overcooked spinach will be mushy and lose its flavor.
- Use a good quality Alfredo sauce: The Alfredo sauce is the star of this pizza, so it's important to use a good quality sauce. You can make your own Alfredo sauce or use a store-bought sauce.
- Don't overload the pizza: It's important to not overload the pizza with toppings. Too many toppings will make the pizza soggy.
- Bake the pizza at a high temperature: This will help to create a crispy crust.
Conclusion:
Spinach Alfredo pizza is a delicious and easy-to-make meal. With a few simple ingredients, you can create a pizza that is both flavorful and satisfying. Whether you're serving it for a party or a weeknight dinner, spinach Alfredo pizza is sure to be a hit.
