6 to 8 frozen strawberries, thawed, hulled and quartered, plus slices for garnish
Juice of 1 large lemon (about 2 tablespoons)
3 tablespoons superfine sugar
3 ounces lemonade vodka, such as Firefly Southern Lemonade, or citrus vodka
1 1/2 ounces elderflower liqueur, such as St-Germain
Club soda or sparkling water

Steps:

  • In a cocktail shaker, muddle the strawberries with the lemon juice and sugar until the sugar dissolves into the lemon juice and the strawberries start to break down into a chunky paste. Add the vodka and elderflower liqueur, and stir together.
  • Spoon the contents of the cocktail shaker into two Collins glasses, add ice and top off with club soda. Stir. Garnish with a few strawberry slices.

1/2 gallon premium strawberry ice cream
1 (16 ounce) container fresh strawberries, stemmed
1/2 cup powdered sugar
1 (6 ounce) can frozen limeade concentrate, partially thawed
1 (6 ounce) can frozen orange juice concentrate, partially thawed

  • Place first 3 ingredients in a food processor and process until pretzels are finely crushed. Firmly press mixture onto bottom of a lightly greased 10-inch springform pan.

1/4 cup corn syrup
2 tablespoons brown sugar
3 tablespoons butter
2 1/2 cups crisp rice cereal
1/2 cup creamy peanut butter
1/2 cup fudge sauce
6 tablespoons corn syrup
1 -2 quart ice cream (vanilla fudge swirl or other)
1/2 cup chopped peanuts
1 cup fudge sauce

Steps:

  • For crust, place corn syrup, brown sugar and butter or margarine in medium saucepan. Cook over medium heat until it boils. Remove from heat.
  • Add rice cereal and stir till combined. Press into the bottom and sides of a buttered 10-inch pie pan. Let cool.
  • In saucepan, combine peanut butter, fudge sauce, and corn syrup. Heat and stir over low heat until smooth. Spread the mixture on top of the cooled rice-cereal crust. Place in the freezer for 2-3 hours or until firm.
  • Scoop ice cream into the pie. Freeze for 4 hours or overnight.
  • Sprinkle with half the peanuts, spread remaining 1 cup of fudge and sprinkle remaining peanuts. Store in the freezer. Before serving, let soften slightly.

I do not have an ice cream freezer yet myself, so I don't know how long the passive cooking (freezing) time would be. I wanted to save this recipe for the day when I do get an ice cream freezer...

1 1/2 cups heavy whipping cream
6 large egg yolks
1 (15 ounce) can sweetened condensed milk
1/2 cup bottled key lime juice (NOT regular lime juice, but specifically KEY LIME juice)
17 ounces jar marshmallow cream
4 crumbled graham crackers

Steps:

  • In a heavy saucepan, bring cream to a simmer. Place the egg yolks in a bowl.
  • Slowly beat the hot cream into the egg yolks. Pour the mixture back into the pan, and place over low heat. Stir constantly with a wooden spoon until the custard thickens slightly, 8 to 10 minutes. Be careful not to let the mixture boil or eggs will scramble. Remove from heat.
  • Pour hot custard through a strainer into a large, clean bowl. Allow the custard to cool slightly. Then stir in the sweetened condensed milk and key lime juice. Cover and refrigerate until cold.
  • Stir the cold custard well, then freeze in your ice-cream freezer according to manufacturer's instructions.
  • Fold the marshmallow cream and crumbled graham crackers into the ice cream when it is finished.
