CHEESY, SPICY BLACK BEAN BAKE
Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

Steps:
- Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
- Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.
HOT BEAN DIP
This bean dip is sooooo good. It is easy to make and is always a hit. I make it for my Super Bowl party each year and it is always gone before half time!! Two cheeses and refried beans are baked with mild spices to create a creamy dip. Serve with tortilla chips.

SASSY & SPICY THREE BEAN DIP
This is my first recipe post! I came up with it when I was trying to duplicate my favorite spicy bean dip that is no longer sold at my grocery store. Everyone LOVES this dip and I am asked to make all the time. The only complaint is that there is never enough! It is pretty easy to make as you just throw all the ingredients into a food processor. It can be used as a filling for burritos, tacos or tostadas as well. I sometimes add half a can (15 oz)of Vegitarian Medium Chili to the food processor as well (for the texture of the TVP). Adjust the heat to your liking. Hope you enjoy! Adios!

Steps:
- Place all ingredients except Jalapenos into food processor and blend until smooth.
- Fold in Diced Jalapenos.
- Taste and adjust hot sauces to pleasant temperature.
- Garnish with cheese and cilantro leaves.
- Serve with chips or put inside a burrito or taco or on a tostada.
Tips:
- Choose the right beans. Pinto beans and black beans are the most common types of beans used in salsa bean dip, but you can use any type of bean you like. If you're using canned beans, be sure to rinse them well before using.
- Use fresh ingredients. Fresh salsa, cheese, and cilantro will give your dip the best flavor. If you can't find fresh salsa, you can use a good quality store-bought salsa.
- Don't overcook the beans. Overcooked beans will be mushy and not very flavorful. Cook the beans until they are just tender.
- Season the dip to taste. Add salt, pepper, and cumin to taste. You can also add a pinch of cayenne pepper for a little heat.
- Serve the dip warm. Salsa bean dip is best served warm, so reheat it before serving if you're making it ahead of time.
Conclusion:
Salsa bean dip is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to use up leftover beans. With just a few simple ingredients, you can make a delicious and flavorful dip that everyone will love. So next time you're looking for a quick and easy snack or appetizer, give salsa bean dip a try.
