1 pound lean ground turkey
2 teaspoons kosher salt (, divided)
3 teaspoon ground cumin (, divided)
1 teaspoon oregano
1 1/2 teaspoon freshly ground black pepper (, divided)
¼ teaspoon crushed red pepper flakes
1 medium onion (, diced)
½ cup red bell pepper (, diced)
3 cloves garlic (, minced or pressed)
1 10- ounce can diced tomatoes and green chilies
1 teaspoon chili powder
10 ounces dried penne pasta
3 cups chicken broth
¼ cup heavy cream
4 cups fresh baby spinach ((2 big handfuls))
½ cup shredded Monterey Jack cheese
Chopped cilantro (, for garnish)

Steps:

  • Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
  • Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
  • Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.

2 bunches broccolini, cut into bite-size pieces
8 ounces sweet Italian turkey sausage, casings removed
1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
Pinch of red pepper flakes
1 large egg
Freshly ground pepper
1/2 cup grated ricotta salata or parmesan cheese (about 2 ounces)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the broccolini during the last 2 minutes of cooking. Reserve 1 cup cooking water, then drain the pasta and broccolini. Meanwhile, roll the sausage meat into about 20 small meatballs. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned and cooked through, 5 to 6 minutes. Drain on paper towels. Pour off any drippings from the skillet, then add the remaining 3 tablespoons olive oil, the garlic, red pepper flakes and 1/2 teaspoon salt. Cook over medium heat, stirring, 1 minute. 1 cup 2% milk
1 jar (4-1/2 ounces) sliced mushrooms, drained

1 red bell pepper, chopped
1 tablespoon chopped fresh thyme or 1 1/2 teaspoons dried
2 large garlic cloves, chopped

1 1/4 pounds ground turkey
1 pound assorted fresh wild mushrooms (such as crimini; stemmed shiitake; portobello, dark gills scraped away), sliced
5 green onions, chopped
1 1/3 cups canned low-salt chicken broth
2 1/2 cups grated Parmesan cheese
1/2 cup dry white wine

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally to prevent sticking. Drain very well. Set pasta aside.

1 cup frank's hot sauce, warmed
2 tablespoons kosher salt (not table salt)

  • For the dry rub: In a small bowl, mix together the dry spices and season turkey tenders. Cover with plastic wrap and place into refrigerator for 1 hour.
  • For the bechamel: In a large saute pot over medium heat, add butter and oil. Warm until the butter melts then whisk in flour, until mixture is smooth.   • Preheat grill or cast iron skillet to high.
