This is a recipe I tried at a friends house once. The combination is actually really tasty, I have made it unsuccessfully and successfully. The difference being the chilli peppers. The heat works so well with the tuna. It's LOW FAT too!!!! Dairy free if served without sour cream. Just to clarify spring onions/scallions I consider to be the same thing.

1 tablespoon olive oil
2 cloves garlic, minced
2 fresh chilies
1 red bell peppers or 1 green bell pepper, diced
5 -7 mushrooms, sliced into thin t's
1 can chopped tomato
1 teaspoon oregano
1 can chunk tuna
5 scallions, chopped ((spring onions))
salt and pepper
sour cream or low-fat sour cream, to serve (optional)
penne, cooked (Two servings)

Steps:

  • Heat olive oil in pan, add garlic and chillis and saute lightly, do not burn.
  • Add bell pepper and mushrooms and saute over medium heat, until soft.
  • Add tin of tomatoes and oregano and simmer about 5 minutes.
  • Add drained tuna chunks and stir in.
  • When tuna is heated, take sauce off heat and add spring onions.
  • Stir in pasta, season to taste.
  • Serve with dollops of sour cream.

6 ounces tri-colored pasta, uncooked
12 ounces canned tuna, in water
1/2 cup yellow bell pepper, cut into strips
1/2 cup cherry tomatoes, halved
1/4 cup diced celery
3/4 cup low salt salsa
1/2 cup low-fat mayonnaise
1/2 teaspoon ground red pepper
2 tablespoons sliced green onions

Steps:

  • Cook pasta according to package directins, omitting salt and fat.
  • Drain; rinse under cold water and drain again.
  • Combine pasta and tuna and next 3 ingredients.
  • Combine salsa, mayo and red pepper.
  • Add to pasta mixture; toss.
  • Cover and chill.
  • If desired, serve in lettuce lined bowl.
  • Sprinkle with sliced onions.

Mangos (2 large), ripe but still firm
Tuna packed in water (1 large can) or about 1 pound fresh cooked, chilled, and shredded
Small shell pasta (1 pound box)
Low Fat Mayonaise (1 quart)
Green Curry Paste (2 to 4 tablespoons)
Fresh ground black pepper (dash) for color
Grated Parmesan cheese (1 pound) OPTIONAL
Plain Breadcrumbs (4 cups) OPTIONAL

Steps:

  • - Prepare the pasta according to normal directions, drain, cool, and pour into a large mixing bowl. Set aside. - In a smaller mixing bowl, add the Green Curry Paste and pepper to the mayonaise and mix until thoroughly blended. Start with 2 tablespoons and add to your taste. Remember that the tuna, pasta, and mango will offset the bite, so you want it a little spicier than you think it should be. - Add the mayonnaise to the pasta and mix thoroughly. Use a rubber spatula to clean the bowl well. - Cook, cool, and shred the tuna (if preparing fresh) or drain the canned tuna well and shred with a fork. Put the shredded tuna into the small mixing bowl. - Peel and chop the mango into quarter inch dice. You want the mango pieces to be about the same size as the cooked pasta shells. Add the mango to the tuna and mix well. - Add the tuna mango mixture to the pasta, using a wooden spoon or your hands to blend well. - Plate the prepared salad and chill for serving. Add thin slices of mango to the top for garnish if desired. - OPTION Split the salad into casserole dishes lined with breadcrumbs or crumbled saltines, and heat it in a 300F oven topped with shredded parmesan cheese until melted. Do not overheat as the sauce is mayonnaise based and may get oily but the breadcrumbs can only absorb so much liquid.

8 cloves garlic, minced
2 tbs. (or to taste) canned or jarred jalapenos, minced
2 cans tuna fish
2 8 oz. cans diced tomatoes
1 lb. penne
Salt

Steps:

  • Chop onion. Mince garlic and jalapeno. Add penne to boiling water. Sautee oninon 1 minute. Add garlic and jalapeno. Sautee until onion is clear, before garlic begins to brown. Add tuna. Sautee one minute. Add tomatoes. Sautee until sauce has thickened. Add salt to taste. Drain pasta. Toss with sauce and serve.

2 28oz cans crushed tomatoes
2 tbsp olive oil
2 cloves garlic, crushed
6 basil leaves, torn
1 tbsp sugar
1 tsp crushed red pepper flakes
1/2 tsp salt
2 grinds of black pepper
2 6oz cans White Albacore tuna in water, drained
1 lb penne pasta
1 tbsp extra virgin olive oil
capers (optional)
freshly grated parmigiano-reggiano cheese

Steps:

  • Start water to boil for pasta, then heat 2 tbsp of olive oil in a saute pan on medium until fragrant, add garlic to 1 tbsp of water then add to heated oil, once water evaporates stir in tomatoes. Let simmer uncovered 10 minutes. Add basil,salt, sugar, pepper flakes and pepper. Allow sauce to simmer for 10-15 more minutes. Add pasta to water and cook al dente, drain. IStir drained tuna into the tomato sauce then add well-drained pasta directly to pan. Toss to coat. Garnish with freshly grated cheese and capers.
