2 cups canned chickpeas, drained, liquid reserved (15.5-ounce can)
1/3 cup tahini or sesame paste
4 teaspoons minced garlic (4 cloves)
6 tablespoons freshly squeezed lemon juice (3 lemons)
8 dashes Tabasco sauce
2 teaspoons kosher salt
Sriracha, to taste
3 tablespoons toasted pine nuts
Good olive oil

Steps:

  • Place the chickpeas, 2 tablespoons of the reserved liquid, the tahini, garlic, lemon juice, Tabasco, and salt in the bowl of a food processor fitted with the steel blade and process until coarsely pureed. The hummus should be moist and thick; add more lemon juice or reserved chickpea liquid to thin, if necessary. Cover and refrigerate for several hours for the flavors to blend. Taste for seasonings. Place the hummus in a serving bowl and drizzle Sriracha over the top. Sprinkle with the pine nuts and a drizzle of olive oil.

1 tablespoon chipotle mayonnaise ("Goya Chipotles in Adobe Sauce")
2 tablespoons salsa (add more or less or skip according to taste)
1 teaspoon chili powder (add more or less accoriding to your taste)
1 teaspoon cumin (add more or less according to your taste)
1 pickle (chopped up, dill or kosher, never use sweet pickles in this)
5 -7 slices jalapeno peppers (pickled or fresh)
1 tablespoon pickled jalepeno pepper juice (from the jars of pickled jalepenos. Yes, that's right, the juice from the jar!)
1 stalk celery, chopped
1/4 teaspoon white pepper (optional)
1/4 cup peas and carrots (optional, I'm just trying to up the nurtrion content and lower the fat)

1 (4 1/2 ounce) package tuna, spicy and sweet flavor
4 ounces hummus, pine nut and sesame flavor
1 medium red bell pepper
1 -2 leaf romaine lettuce
1/4 cup yellow onions (optional) or 1/4 cup red onion (optional)

Steps:

  • Mix tuna and hummus into a medium mixing bowl. Chop your onions as desired and mix all ingredients. Let mixture blend and slice your red bell pepper into quarters and clean out the seeds and ribs out. Clean your romaine lettuce and slice into large pieces and arrange nicely on your plate (you will use the lettuce to eat up all the tuna that might fall out of your pepper cup). Fill the red bell peppers with tuna mixture and place on lettuce. Your done and enjoy.
