A tasty twist to salsa; great served over cream cheese with tortilla chips or crackers! A great way to save those green tomatoes when there is an early frost. I created this recipe with the assistance of my daughter-in-law Carolyn and her niece Felicia. Thanks you two. Portion out remaining salsa into bags; freeze or refrigerate.

12 ½ cups chopped green tomatoes
2 onions, chopped
4 jalapeno peppers, sliced into 1/2-inch-thick rings
4 serrano peppers, sliced into 1/2-inch-thick rings
1 red bell pepper, cut into chunks
1 cup chopped fresh cilantro
¼ cup raw sugar
3 tablespoons minced garlic
2 ½ tablespoons chopped fresh oregano
1 tablespoon cayenne pepper
6 limes, juiced, divided
1 tablespoon apple cider vinegar

Steps:

  • Combine green tomatoes, onions, jalapeno peppers, serrano peppers, and red bell pepper in a large bowl.
  • Mix cilantro, sugar, garlic, oregano, and cayenne pepper together in a small bowl.
  • Fill a blender with about 2 cups tomato mixture, 1 teaspoon lime juice, and 1/4 of the spice mixture; blend to desired consistency and pour into a large bowl. Repeat blending with remaining tomato mixture, lime juice, and spice mixture, working in batches, until all ingredients are blended. Stir vinegar into salsa.

2 cloves garlic, peeled
1 small red onion, peeled and quartered
1 jalapeno, seeded and quartered
8 plum tomatoes, quartered
1 cup cilantro leaves, washed and dried
Juice of one lime
2 tablespoons olive oil
Salt and pepper

Steps:

  • Combine garlic, onion and jalapeno in a blender or food processor and process until finely chopped. Add tomatoes and blend. Add cilantro, lime juice and oil and continue blending. Transfer salsa to a bowl and season with salt and pepper.
  • Roasted salsa variation: Place the garlic, onion, jalapeno and tomatoes on a sheet pan and roast for 30 minutes at 400 degrees, then proceed as directed.

20 large prawns, peeled and deveined
2 -3 garlic cloves, minced
1 teaspoon paprika
1/2 teaspoon chili powder
1 tablespoon lime juice
salt
4 tomatoes, seeded and diced
1 avocado, diced
3 spring onions, finely chopped
1 fresh green chilies or 1 red chile, seeded and finely chopped
1 tablespoon finely chopped coriander
1 garlic clove, minced
4 tablespoons lime juice
3 tablespoons olive oil
salt & freshly ground black pepper

Steps:

  • For salsa, combine tomatoes, avocado, spring onion, chilli, coriander, garlic, lime juice and oil in a bowl and season with salt and pepper (you may make this upto 3 hours in advance. Cover tightly with cling film and refrigerate).
  • You will need 4 wooden skewers soaked in water for atleast 20 minutes to stop them from burning.
  • In a bowl, combine the minced garlic, paprika, chilli powder, lime juice and salt.
  • Add in the prawns and toss to coat evenly.
  • Thread 5 prawns onto each skewer, cover with clingfilm and refrigerate for 30 minutes (you may marinate the prawns upto 2 hours in advance).
  • Pre-heat indoor grill to medium-hot, or for outdoor grills, medium-hot coals.
  • Grill the prawns until they are pink and the flesh is opaque, about 3 minutes on each side.
  • Serve hot with salsa and/or grilled lime wedges.
