1 large sweet red onion, thinly sliced
3 anaheim chiles, seeded and thinly sliced (galapagos if you prefer)
1/4 c fresh parsley, finely chopped
1/4 c celery, sliced 1/8 inch thick
1/4 c whole grain prepared mustard
2 tsp sugar, salt to taste
