12 ounces mostaccioli or penne pasta
1/2 cup mayonnaise
1/4 cup whole milk
1/4 cup white vinegar, plus more if needed
Freshly ground pepper
1 1/2 teaspoons adobo sauce from a can of chipotles (or 1 minced chipotle)
1 10-ounce package grape tomatoes, halved lengthwise
1/2 pound smoked gouda cheese, cut into small cubes
24 fresh basil leaves, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and rinse under cold water until no longer hot; set aside.
  • Make the dressing: Mix the mayonnaise, milk, vinegar, 1/2 teaspoon salt, pepper to taste and the adobo sauce in a small bowl.
  • In a large bowl, combine the pasta, dressing, tomatoes and gouda. Taste for seasoning, adding more salt and pepper if needed, and even an extra teaspoon or 2 of vinegar, if necessary. Stir in the basil at the end. Refrigerate for a couple of hours before serving.

1 to 2 tablespoons white vinegar

10 ounces grape tomatoes, halved lengthwise
8 ounces smoked Gouda, cut into small cubes
24 whole basil leaves, cut into a chiffonade

Steps:

  • Cook the pasta according to the package directions. Drain and rinse under cold water until no longer hot. Set aside.

1 (16 ounce) bottle wishbone robust Italian dressing
1 (16 ounce) package buttermilk ranch salad dressing mix
30 -40 cherry tomatoes or 30 -40 grape tomatoes, sliced
1 cucumber, peeled & diced
1 (6 ounce) can sliced black olives
1 tablespoon dried sweet basil leaves
1 (3 ounce) bag zatarain crab boil
1 (8 ounce) bag tri-color spiral pasta
1 (8 ounce) bag bow tie pasta
16 ounces frozen cooked baby shrimp

Steps:

  • Pour Italian dressing into large bowl and add dry ranch dressing mix, stirring well.
  • Add diced cucumbers, sliced tomatoes, olives and basil, cover and marinate a couple of hours.
  • In a large pot, place enough water for pasta and drop crab boil bag into water.
  • When water comes to boil, place pasta into water and cook until almost done, then turn heat off, add the frozen shrimp and let sit in crab boil water until pasta is tender.
  • Drain shrimp and pasta mixture into a large bowl.
  • Pour dressing mixture over pasta and shrimp, mixing well.
  • Cover and let chill before serving--overnight is even better.

4 tablespoons olive oil
2 tablespoons garlic, minced
3 lbs tomatoes, very ripe, coarsely chopped with liquid reserved
1/2 cup fresh basil, coarsely chopped
1 tablespoon red wine vinegar
1/2 teaspoon salt
fresh ground black pepper (to taste)
1 lb spaghetti
freshly grated parmesan cheese (to taste)

Steps:

  • In a small skillet, over medium-low heat, heat 1 T. of the oil. Add garlic and cook; stirring constantly, for about 3 minutes. Do not brown. Transfer to a large bowl.
  • To the garlic in the bowl, add the tomatoes and their liquid, the remaining 3 T. olive oil, basil, vinegar, salt and pepper; mix well. Let stand for 1 hour for flavors to blend.
  • Just before you are ready to serve, cook spaghetti according to package directions; drain. Turn into a large pasta bowl, add the sauce, and toss to coat. Add Parmesan cheese to taste and serve.

The sauce for this pantry pasta is a vegetarian take on arrabbiata and amatriciana sauces, two spicy tomato sauces from Southern Italy that include pancetta or guanciale. The authentic versions would call for grated Pecorino Romano cheese, but I've already broken with tradition here, so use either Pecorino of Parmesan.

1 (28-ounce) can chopped tomatoes in juice
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 small dried red chili pepper, crumbled, or 1/4 teaspon red pepper flakes
Salt to taste
1 teaspoon dried oregano or 2 teaspoons slivered fresh basil
1 pound penne, bucatini, pericatelli, or spaghetti
1/2 cup freshly grated Pecorino Romano or Parmesan

Steps:

  • Begin heating a large pot of water for the pasta.
  • Pulse the chopped tomatoes in a food processor fitted with the steel blade, or pass through the medium blade of a food mill with their juice before you begin. Heat the oil over medium heat in a large, wide nonstick skillet or saucepan and add the garlic and crumbled chili (or flakes). Cook, stirring, for 30 seconds to a minute, until the garlic is translucent and begins to smell fragrant, and add the tomatoes and their juice, salt, and oregano if using. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 25 minutes. Taste and adjust seasonings. Keep warm while you cook the pasta.
  • When the pasta water comes to a boil, add a tablespoon of salt and the pasta. Cook the pasta al dente, following the timing instructions on the package but checking a minute or two before the time on the package. When the pasta is done, transfer to the pan with the sauce, add the basil if using, and toss together over medium heat until it is well coated with the sauce. Add half the cheese, toss together and serve, passing the remaining cheese at the table.
