Number Of Ingredients 19

600g/1lb 5oz salmon fillet, skin removed and cut into chunks
1 large free-range egg
2 tsp lemongrass paste
2 tbsp Thai red curry paste
1 tbsp fish sauce
4 kaffir lime leaves, finely shredded
100g/3½oz green beans, finely sliced
1-calorie sunflower oil spray
sea salt and freshly ground black pepper
2 limes, cut in half, to serve
2 carrots (about 200g/7oz), peeled and cut into thin ribbons
200g/7oz cucumber, peeled and cut into thin ribbons
½ red onion, thinly sliced
12 radishes, thinly sliced
large handful of coriander, roughly chopped
60g/2¼oz mixed salad leaves
1 tbsp rice wine vinegar
1 tbsp soy sauce
salt and freshly ground black pepper

Steps:

  • Put the salmon into a food processor with the egg, lemongrass paste, curry paste, fish sauce and lime leaves. Season with salt and pepper and blend until the mixture comes together but still has some texture. Transfer to a bowl and fold in the sliced beans. Cover and leave in the fridge until needed.
  • To make the salad, mix together the carrot, cucumber, red onion, radishes, coriander and mixed leaves in a large bowl.
  • Heat a large pan over a medium-high heat. Divide the fish cake mixture into eight equal-sized pieces and shape into patties. Spray a little oil into the pan and add four of the fish cakes, spacing them apart and flattening each one slightly. Cook for 2-3 minutes on each side or until cooked through. Set the cooked fish cakes aside on kitchen paper while you cook the remaining fish cakes.
  • Add the rice vinegar and soy sauce to the salad and mix well. Divide between serving plates and add two fish cakes and a lime half to each plate. Serve straight away.

SPICY THAI SALMON CAKES

Spicy Thai Salmon Cakes image

I make these up and freeze to use the last bits off the wonderful wild salmon we have on the West Coast. After steaking and filleting, I will steam the carcasses to get all the remaining morsels. Yes, you can just use purchased salmon as well. Note that the wild king/coho salmon on the West Coast have much more taste than farmed salmon though.

Time 40m

Yield 10-12 cakes, 4-6 serving(s)

Number Of Ingredients 12

2 shallots, thinly sliced
1 -2 teaspoon dried red pepper flakes (optional)
2 kaffir lime leaves, thinly sliced (or lime zest)
1 1/2 teaspoons Thai red curry paste (plastic tubs in oriental food sections)
1 egg
1/2 teaspoon salt
1 teaspoon sugar
2 tablespoons mayonnaise
1 teaspoon cornstarch
1/4 lb raw shrimp, minced
1 lb boneless salmon, steamed 15 minutes and flaked
1 tablespoon fresh cilantro, chopped

Steps:

  • Combine everything but salmon in food processor and process until smooth.
  • Mix in salmon and cilantro.
  • Shape into patties about 3 inch diameter and 1/2 inch thick (wet hands help).
  • Dust patties with cornstarch on both sides.
  • If freezing,,, freeze on sheets, then vacuum pack, and store in freezer.
  • To cook, defrost if frozen. Skillet fry in about 1/3 inch of moderately hot oil until each side is just done and golden brown (2-3 minutes each side). Drain on paper towels.
  • Quite nice served with Thai Sweet Chili Sauce on top (also posted to recipezaar).

Tips:

  • Choose the right salmon. Fresh, wild-caught salmon is best for this recipe. If you can't find fresh salmon, frozen salmon will also work.
  • Don't overcook the salmon. Salmon is a delicate fish, so it's important to cook it carefully. Overcooked salmon will be dry and tough.
  • Use a large skillet. This will help to ensure that the salmon cakes cook evenly.
  • Be careful when flipping the salmon cakes. They are delicate and can easily break apart.
  • Serve the salmon cakes with your favorite dipping sauce. Some popular choices include sweet chili sauce, soy sauce, and Sriracha sauce.

Conclusion:

Spicy Thai salmon cakes are a delicious and easy-to-make appetizer or main course. They are perfect for a party or a weeknight meal. With a crispy exterior and a tender, flavorful interior, these salmon cakes are sure to be a hit with everyone who tries them.
