Add the brown sugar, coffee, ketchup, mustard, chile paste and 1 teaspoon each salt and pepper, then add the beans and stir to combine. Bring to a simmer, then cover and cook until the sauce has thickened, 12 to 15 minutes.
  • Remove the pot from the heat and stir in the sour cream. Taste and adjust the seasoning as needed. Transfer the dip to a serving bowl and garnish with the Cheddar, green onions and reserved bacon. Serve with crackers or chips alongside.

Tips:

  • When choosing chuck roast, look for one with good marbling. This will help ensure that the beef is tender and flavorful.
  • If you don't have a Dutch oven, you can also use a large pot or braising pan. Just make sure that the pot is large enough to hold all of the ingredients.
  • Be sure to brown the beef well before adding it to the pot. This will help develop the flavor of the beef and prevent it from becoming tough.
  • Once the beef is browned, add the vegetables and cook them until they are softened. This will add flavor and depth to the sauce.
  • Be sure to use a good quality beef broth. This will make a big difference in the flavor of the final dish.
  • Let the beef simmer for at least 2 hours, or until it is fall-apart tender. The longer the beef simmers, the more flavorful it will be.
