4 thin-cut chicken breasts (chicken cutlets)
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 teaspoon cayenne pepper
1 large egg, lightly beaten
1/4 cup buttermilk
1 tablespoon plus 1 cup Louisiana-style hot sauce
1 cup panko breadcrumbs
6 tablespoons salted butter, melted
1/4 cup olive oil
4 toasted buns
1/2 cup pickle chips, drained

Steps:

  • Sprinkle the chicken breast with salt and pepper and set aside. Mix the flour and cayenne in a shallow dish or bowl. Stir together the egg, buttermilk and 1 tablespoon hot sauce in a second shallow dish or bowl. Add the breadcrumbs to a third shallow dish. Coat each chicken breast by dredging in the flour mix, then dipping in the egg/buttermilk mixture and then finally in the breadcrumbs. Set aside.
  • To a bowl, add the remaining cup of Louisiana hot sauce and 2 tablespoons of the melted butter. Mix together and set aside.
  • Heat the olive oil and remaining 4 tablespoons butter in a large skillet over a medium heat. When the oil is hot and the butter has melted, add the chicken pieces to the skillet and fry until golden and cooked through, about 4 minutes per side. Remove and set aside. One by one dip the crisp chicken into the Louisiana hot sauce and butter mixture, turning to coat completely.
  • Serve on the toasted buns with tons of pickles.

2 boneless, skinless chicken breasts
2 cups buttermilk
1/2 cup hot sauce
2 tablespoons Hungarian hot paprika
Kosher salt and freshly ground black pepper
Peanut oil, for frying
1 1/2 cups all-purpose flour, plus more for dusting
1/4 cup cornstarch
1 teaspoon baking powder
2 tablespoons unsalted butter, softened
2 brioche hamburger buns
1/4 cup mayonnaise
1/2 teaspoon chipotle in adobo sauce
6 dill pickle slices

Steps:

  • For the marinade/batter: Use kitchen scissors to cut 6 to 7 small horizontal slivers, about 1 1/2 to 2 inches deep, into each chicken breast, to give them potential for crispies when fried. Set aside.
  • Whisk together the buttermilk, hot sauce, paprika, a nice pinch of salt and plenty of grinds of pepper in a medium bowl. Add to a resealable bag or large bowl along with the chicken and soak for 2 hours at room temperature or overnight in the refrigerator. Bring the chicken to room temperature before frying.
  • Heat several inches of oil in a pot or deep-fryer to 375 degrees F.
  • Remove the chicken from the marinade and pat dry (reserving the marinade), then set aside. Whisk together the flour, cornstarch and baking powder in a large bowl. Slowly add the marinade liquid while whisking to form a pancake batter consistency. (If you go too far, just add more flour or about 2 tablespoons of water, depending on the texture.) Dust the chicken with some flour, then dunk in the batter to coat. Dust the chicken again with flour, then shake gently and slowly drop into the hot oil. Fry in batches until cooked through and golden on the outside, about 8 minutes. Remove and season with a pinch of salt and rest briefly on a few scrunched paper towels on a plate.
  • For the sandwich: Butter both sides of each bun. Toast lightly in a grill pan or in the oven until lightly golden brown and warm, about 2 minutes.
  • Stir together the mayonnaise and chipotle in a small bowl. Smear on the cut sides of the bun bottoms, then add the chicken, pickles and the bun tops. Wrap in aluminum foil pouches and let rest for less than 1 minute, then serve.

CHICKEN SALAD
1 large chicken breast, chopped (smoked, bone-in with skin on); remove skin and bone before chopping
1/2 c onion, chopped
1/3 c red bell pepper, chopped
1/2 c fresh cilantro, pulled from stem then chopped
1/8 c canned black olives, chopped
2 pickled jalapeno peppers, chopped
1 canned chipotle pepper in adobe sauce, chopped ( kat uses two.)
1/4 tsp ground cumin powder
salt and pepper, to taste
3/4 c mayonnaise (more if needed, to moisten the above ingredients)
BREAD
cheddar jalapeno bread or hard sandwich rolls for eight sandwiches
garlic powder
cooking spray
GARNISH
peach slices, pineapple slices, or avocado

Steps:

  • 1. Combine all chicken salad ingredients in bowl and mix well. This is a very hot and spicy recipe, but you can reduce the chipotle and jalapeno pepper if you wish. (The pickled jalapeno gives the chicken salad a little of the tartness that we expect with dill pickles in a traditional chicken salad.)
  • 2. Once mixed, sprinkle garlic powder on the bread or rolls, spray with cooking spray and then toast under the broiler.
  • 3. Spread chicken salad mixture on the toasted bread, and choose a garnish, if you wish. Try pineapple or peach slices (even better if it's grilled.) The sweetness of the fruit will complement and tame the heat from the peppers. Avocado is also a tasty garnish.

1 chipotle chile, canned
2 tablespoons adobo sauce
2 tablespoons water
1/4 cup olive oil
1 tablespoon balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon light brown sugar
salt
black pepper, freshly ground
1 avocado, ripe and pitted
1/4 cup fresh cilantro, chopped
1 lime, juice of
2 1/2 cups chicken, thinly sliced
4 slices bacon, thick, cooked until crisp (optional)
1 large tomatoes, ripe, cored and thinly sliced
1/2 red onion, thinly sliced
8 slices focaccia bread or 8 slices sourdough bread, lightly toasted

Steps:

  • 1. In a blender, mini-chop, or food processor, pulse the sun-dried tomatoes, chipotle, adobo sauce, water, oil, vinegar, mustard, and brown sugar together until smooth. Season with salt and pepper to taste and pulse again. Transfer to a small bowl.
  • 2. In another small bowl, mash the avocado with half the cilantro and all of the lime juice. Season generously with salt and pepper to taste.
  • 3. Spread 4 of the slices of bread with the avocado mixture. Spread the remaining 4 pieces of bread with the sun-dried tomato-and-chipotle mixture, then layer on the chicken, bacon, tomato, onion, the remaining cilantro, and the bread. Cut in half and serve immediately.
