Time 40m

Yield 4 rolls

Number Of Ingredients 12

One 8-ounce red snapper fillet
5 tablespoons Kewpie mayonnaise
2 tablespoons sriracha
1 tablespoon wasabi paste, plus more for serving
2 cups cooked sushi rice, cooled to room temperature
1 1/2 tablespoons seasoned rice vinegar
4 nori sheets
1 English cucumber, peeled and sliced lengthwise into 1/2-inch wide strips
1 avocado, sliced crosswise into 1/2-inch pieces
2 tablespoons furikake spice
2 ounces salmon roe (about 1/4 cup)
Toasted sesame oil, pickled ginger and soy sauce, for serving

Steps:

  • Remove all skin, pin bones, blood lines and sinew from the snapper fillet. Slice the fillet lengthwise into long strips about 1/2-inch wide and refrigerate until ready to use.
  • Whisk together 2 tablespoons of the mayonnaise with the sriracha in a small bowl. In a separate small bowl, whisk together the remaining 3 tablespoons of mayonnaise with the wasabi paste and a splash of water if needed to loosen the mixture. In a medium bowl, gently combine the cooked sushi rice with the vinegar.
  • Lay a piece of plastic that is bigger than the nori sheet on a clean work surface. Lay a nori sheet on top of the plastic in the center. Dip your fingers in water as needed to keep them from sticking to the rice, then use your fingers to spread 1/2 cup of the sushi rice evenly on the nori sheet and gently press down. Flip the nori sheet over so the rice is face down.
  • Spoon about 2 teaspoons of the sriracha mayonnaise horizontally across the center of the nori sheet. Place 2 strips of snapper on top of the mayonnaise, then top with a strip of cucumber and 4 to 5 slices of avocado. Using the plastic wrap as a guide, roll the sushi as tight as possible into a log. Trim any excess nori as needed. Remove the plastic and use a sushi mat to form the sushi into a uniform round roll with a flat bottom. Repeat with the remaining ingredients to assemble three more rolls.
  • Cut each roll into 6 to 9 pieces. Use a spoon to smear about 1 tablespoon of the wasabi mayonnaise on one side of the serving plate. Place the sushi on the other side of the plate, then sprinkle with some of the furikake. Place about 1 tablespoon salmon roe on top of the wasabi mayonnaise and garnish the plate with a splash of toasted sesame oil. Serve immediately with pickled ginger, soy sauce and wasabi paste.

SPICY SUSHI ROLL

The following is a basic spicy sushi roll, readily suitable for either crab or tuna. Different people will be suited to different degrees of spiciness for the sauce, so you may want to adjust proportions accordingly to your liking. Final product will be cool and slightly sweet at first, with a tight, hot afterbite following, and then linger for a while after with a duller burning, flavorful taste.

Time 25m

Yield 2 servings

Number Of Ingredients 10

One 6-ounce red snapper fillet
1 anchovy fillet, mashed into a paste
1 lemon
1 tablespoon capers, drained and chopped
1 tablespoon Dijon mustard
1/3 cup extra-virgin olive oil, plus more for grilling and drizzling
Two 1/2-inch-thick slices sourdough bread
1 tablespoon chopped fresh Italian flat leaf parsley
2 scallions, green parts thinly sliced on a bias
Flaky sea salt

Steps:

  • Preheat the oven to 200 degrees F. Place a serving plate in the oven and let warm. Preheat a grill pan to medium-high heat.
  • Remove all skin, pin bones, blood lines and sinew from the fillet. Trim the tip of the tail end off the fillet. Separate the top side from the bottom side of the fillet; reserve the bottom for another use. Wrap the top side of the fillet in plastic and freeze for 20 minutes. This firms up the fish considerably, making it easier to slice.
  • Meanwhile, whisk together the anchovy and the juice from half the lemon in a medium bowl. Whisk in the capers and Dijon. Slowly add the olive oil in a steady stream to create an emulsion. Set the vinaigrette aside.
  • Brush the sourdough slices on both sides with some oil. Grill until toasted, about 3 minutes per side. Trim off the crusts and cut the bread into small triangles.
  • Remove the trout from the freezer. Slice as thinly as possible on a slight angle. Transfer directly to the warmed plate and drizzle with olive oil.
  • Spoon the vinaigrette over the trout and top with the scallions, parsley, lemon zest from half the lemon and a spinkle of Maldon. Serve with the grilled sourdough.

Time 1h45m

Yield 4

Number Of Ingredients 11

2 cups uncooked glutinous white rice
2 ½ cups water
1 tablespoon rice vinegar
1 (5 ounce) can solid white tuna in water, drained
1 tablespoon mayonnaise
1 teaspoon chili powder
1 teaspoon wasabi paste
4 sheets nori (dry seaweed)
½ cucumber, finely diced
1 carrot, finely diced
1 avocado - peeled, pitted and diced

Steps:

  • Bring the rice, water, and vinegar to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let stand, covered, for about 10 minutes to absorb any excess water. Set rice aside to cool.
  • Lightly mix together the tuna, mayonnaise, chili powder, and wasabi paste in a bowl, breaking the tuna apart but not mashing it into a paste.
  • To roll the sushi, cover a bamboo sushi rolling mat with plastic wrap. Lay a sheet of nori, rough side up, on the plastic wrap. With wet fingers, firmly pat a thick, even layer of prepared rice over the nori, covering it completely. Place about 1 tablespoon each of diced cucumber, carrot, and avocado in a line along the bottom edge of the sheet, and spread a line of tuna mixture alongside the vegetables.
  • Pick up the edge of the bamboo rolling sheet, fold the bottom edge of the sheet up, enclosing the filling, and tightly roll the sushi into a thick cylinder. Once the sushi is rolled, wrap it in the mat and gently squeeze to compact it tightly. Cut each roll into 6 pieces, and refrigerate until served.

Tips:

  • Choose the freshest fish possible. The fresher the fish, the better the sushi will taste. If you can, buy sushi-grade fish from a reputable source.
  • Make sure your rice is cooked properly. The rice should be cooked until it is tender but still has a slight bite to it. You should also let the rice cool completely before assembling the sushi rolls.
  • Use a sharp knife to cut the fish and vegetables. This will help you get clean, even cuts that will make the sushi rolls look more appealing.
  • Be careful not to overfill the sushi rolls. If the rolls are too full, they will be difficult to roll and will fall apart. Aim for a roll that is about 1-inch in diameter.
  • Wet your hands before handling the rice. This will help prevent the rice from sticking to your hands.
  • Be patient. Making sushi takes time and practice. Don't get discouraged if your first few rolls don't turn out perfect. Just keep practicing and you'll eventually get the hang of it.

Conclusion:

Spicy snapper maki rolls are a delicious and easy-to-make sushi recipe. They are perfect for a party or a quick weeknight meal. With a few simple ingredients and a little practice, you can make sushi rolls that are just as good as the ones you get from a restaurant. So what are you waiting for? Give this recipe a try today!
