Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them in the refrigerator overnight or under cold running water for about 30 minutes.
  • Don't overcook the shrimp: Shrimp cook very quickly, so it's important not to overcook them. Otherwise, they will become tough and rubbery. Cook them for just 2-3 minutes per side, or until they are opaque and pink.
  • Use a good quality olive oil: Olive oil is a key ingredient in scampi sauce, so it's important to use a good quality oil. Look for an extra virgin olive oil that has a fruity, peppery flavor.
  • Don't be afraid to adjust the spice level: This recipe calls for 1/4 teaspoon of red pepper flakes, but you can adjust the amount to suit your own taste. If you like spicy food, you can add more red pepper flakes. If you prefer a milder dish, you can omit the red pepper flakes altogether.
