Spicy Shrimp & Penne Pasta image

I created this creamy pasta dish when I needed to use up some marinara. Red pepper flakes give it a little heat, which my family loves. It's super versatile, so try it with chicken, or simply stir in some fresh basil, too. -Lorri Stout, Gaithersburg, Maryland

SHRIMP PASTA SKILLET

I used to make this skillet dinner with fresh Gulf shrimp just caught that morning in Louisiana, but it's still yummy with frozen shrimp here in Missouri. Pair it with crusty French bread and a glass of wine and you have good eatin'!

Tips for a Perfect Spicy Shrimp Pasta Skillet

- **Select the freshest shrimp you can find.** Look for shrimp that are plump and have a slight briny smell. Avoid shrimp that are gray or have a slimy texture. - **Use a large skillet.** This will allow the shrimp and pasta to cook evenly. - **Cook the shrimp in batches.** This will prevent the shrimp from overcrowding the skillet and becoming rubbery. - **Add the pasta to the skillet once the shrimp is cooked through.** This will help the pasta to absorb the flavorful sauce. - **Stir the pasta frequently.** This will prevent the pasta from sticking together. - **Add the cheese at the end of the cooking process.** This will prevent the cheese from becoming rubbery. - **Season the dish to taste.** Add salt, pepper, and red pepper flakes to taste. - **Serve the pasta immediately.** This is when it is at its best.
