Tips:

  • Properly devein and clean shrimp: Remove the vein along the shrimp's back with a sharp knife. Rinse the shrimp thoroughly under cold running water to remove any remaining grit or impurities.
  • Marinate shrimp in a flavorful mixture: Combine soy sauce, mirin, sake, and ginger in a bowl. Add shrimp and marinate for at least 15 minutes, allowing the flavors to penetrate the shrimp.
  • Cook shrimp in a hot skillet: Heat a large skillet over medium-high heat and add oil. Once the oil is shimmering, add marinated shrimp and cook until they turn pink and opaque, about 2-3 minutes per side.
  • Choose the right udon noodles: Look for thick, chewy udon noodles made from wheat flour. You can find them in the Asian section of most grocery stores.
  • Cook udon noodles according to package instructions: Bring a large pot of salted water to a boil and add udon noodles. Cook for the time indicated on the package, or until noodles are tender but still slightly firm.
  • Make a flavorful sauce: Combine soy sauce, mirin, sake, and dashi in a saucepan. Bring to a simmer over medium heat and let it simmer for a few minutes, allowing the flavors to meld.
  • Assemble the dish: In a large bowl, combine cooked udon noodles, shrimp, vegetables, and sauce. Toss to coat everything evenly.
  • Garnish and enjoy: Top with green onions, sesame seeds, and a sprinkle of chili flakes. Serve immediately.
