1/4 cup all-purpose flour
2 tablespoons packed light brown sugar
1 1/2 tablespoons ancho chile powder
2 cloves garlic, minced
2 teaspoons finely chopped fresh thyme
Kosher salt and freshly ground pepper
4 pounds bone-in short ribs (about 2 inches thick)
3/4 cup apple butter
1/4 cup yellow mustard
1/4 cup ketchup
1 cup apple cider
3 carrots, thinly sliced
5 scallions (white and light green parts only), thinly sliced
Cornbread, for serving

Steps:

  • Combine the flour, brown sugar, chile powder, garlic, thyme, 2 teaspoons salt and a few grinds of pepper in a small bowl. Sprinkle all over the short ribs and rub into the meat. Arrange the ribs in a single layer in a 6-quart slow cooker. Sprinkle any of the remaining flour mixture on top.
  • Whisk the apple butter, mustard, ketchup and cider in a medium microwave-safe bowl. Microwave until very hot, then transfer to the slow cooker. Cover and cook on high, 4 hours.
  • Using tongs, turn the ribs in the sauce to coat, then remove to a bowl. Skim off the fat from the sauce (there will be quite a bit), then return the ribs to the sauce and add the carrots and scallions. Cover and cook on high, 2 more hours. Serve with cornbread.

3 tablespoons olive oil
6 beef short ribs (about 4 pounds)
Kosher salt and freshly ground black pepper
1 pound cremini mushrooms, sliced
4 cloves garlic, chopped
1 medium carrot, diced
1 medium onion, diced
1 sprig fresh rosemary
2 cups dry red wine
One 24-ounce jar arrabbiata sauce, such as Rao's Homemade® Arrabbiata Sauce
Crushed red pepper, as desired, optional
1/4 cup chopped fresh parsley
6 cups low-sodium chicken broth or water
1 1/2 cups stone-ground cornmeal
Kosher salt
1/2 cup freshly grated Parmesan
3 tablespoons unsalted butter

Steps:

  • For the short ribs: Preheat the oven to 325 degrees F.
  • Heat the oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Sprinkle the short ribs generously with salt and pepper, then add them to the pot and brown on all sides until golden, about 8 minutes. Transfer to a plate.
  • Add the mushrooms to the drippings in the pot and cook, stirring occasionally, until softened and all the water has cooked out, about 8 minutes. Add half the garlic and continue to cook, stirring frequently, until the mushrooms are crisp and golden and the garlic is softened, about 3 minutes more. Use a slotted spoon to transfer the mushroom mixture to a bowl; set aside.
  • Reduce the heat to medium, add the carrot, onion, rosemary and remaining garlic to the pot and cook, stirring often and scraping up any browned bits from the bottom, until the onions and carrots are softened, about 5 minutes. Pour in the wine and bring to a boil. Cook until slightly reduced, about 3 minutes. Stir in the arrabbiata sauce and 2 cups water and return the short ribs to the pot. Bring to a boil, cover with a tight-fitting lid and transfer to the oven. Cook until the meat is fork-tender, about 2 1/2 hours.
  • Remove the meat from the sauce and transfer to a plate. Set the sauce aside to let the braising liquid and fat separate, about 10 minutes, then skim off and discard the fat. Discard the rosemary sprig, stir in the reserved mushrooms and add salt and pepper to taste. If you prefer it spicier, add crushed red pepper as well. Return the short ribs to the sauce and keep warm over low heat.
  • For the polenta: Meanwhile, bring the chicken broth to a boil in a medium saucepan over high heat. While whisking constantly, slowly pour the cornmeal into the hot liquid. Stir in 1 1/2 teaspoons salt. Lower the heat to a gentle simmer and cook, stirring frequently, until the cornmeal is creamy and no longer grainy, about 30 minutes. Remove from the heat and stir in the Parmesan and butter.
  • Divide the polenta among 6 shallow bowls and top each with a short rib and some sauce. Sprinkle with the parsley.

Steps:

  • In a large bowl, combine the first seven ingredients; rub over ribs. 3 1/2 lbs beef short ribs
1/2 cup water
2 bunches scallions, thinly sliced diagonally
1 garlic clove, minced
1 inch fresh ginger, peeled and minced
1/3 cup soy sauce
1/4 cup rice vinegar
1/4 cup molasses
1/4 cup brown sugar
1/4 cup chili-garlic sauce
1/4 cup hoisin sauce (or plum sauce)
2 limes, juice of
1 tablespoon toasted sesame oil
1 teaspoon cayenne pepper
1/2 teaspoon fresh ground black pepper
2 tablespoons sesame seeds

Steps:

  • Trim excess fat off ribs.
  • In a heavy skillet over medium-high heat, brown the ribs on all sides in batches. Transfer browned ribs to an oval slow cooker (for a better fit, but round may be used).
  • Deglaze the skillet with 1/2 cup water and pour the resulting liquid over the ribs.
  • In a medium bowl combine half of the scallions and all remaining ingredients except the sesame seeds. Stir until the sugar is dissolved, pour over the ribs.
  • Cook on the low setting 6 hours or until the meat is tender (some will fall from the bone).
  • Toast the sesame seeds in a small skillet until lightly browned. Transfer to a bowl to cool and set aside.

3 lb (1.4 kg) bone-in beef short ribs
1 tsp (6 g) kosher salt
Freshly ground black pepper
1/2 tsp ground cumin
1 tbsp (7.5 g) ancho chile powder
2 tbsp (28 ml) basil garlic olive oil (see tip)
3 cloves garlic, chopped
1/2 cup (8 g) chopped fresh cilantro
1 tsp (3 g) seeded and minced jalapeño pepper
1 cup (235 ml) vegetable broth
1/4 cup (60 g) dark brown sugar
1 tbsp (5 g) four-peppercorn blend, crushed
1/2 cup (120 ml) beef stock
1 cup (235 ml) red wine (I recommend a good Chilean variety)

Steps:

  • Rinse and pat dry the short ribs. Season with the salt, pepper, cumin and ancho chile powder. Heat the olive oil over high for the stovetop pressure cooker or use the browning setting for the electric pressure cooker.
  • Add the short ribs and brown on all sides, about 4 minutes. While the ribs are browning, make the sauce: Add the garlic, cilantro, jalapeño, vegetable broth, sugar and four-peppercorn blend to a food processor and blend for 1 minute, or until the cilantro has liquefied. Cover the ribs with the mixture, using a rubber spatula to scrape the processor. Pour in the beef stock and wine and stir. Cancel cooking for the electric cooker, and close the lid.
  • Stovetop Pressure Cooker: Set to high pressure (15 PSI) and set the timer for 35 minutes. Cook over high heat for 25 minutes, then reduce the heat to medium and continue to cook for the last 10 minutes.
  • Electric Pressure Cooker: Set to high pressure (10-12 PSI) and 40 minutes.
  • When done, remove from the heat or turn off the cooker and allow the pressure to release on its own (natural-release), about 12 minutes.
  • When all of the pressure is out, adjust for salt and remove the short ribs from the pot. Transfer to a serving platter. Cross-cut across several bones and into three parts or however many bones your ribs have.

2 lb flanken style ribs (korean style)
2 large shallots
3 clove garlic
4 thai dried red chili
2 tomatoes
3 Tbsp peanut oil
2 tsp ground coriander
2 Tbsp soy sauce
½ c sweet soy sauce
1 Tbsp tomato paste

  • 1. In a small bowl, mix together soy sauce, sweet soy sauce, coriander and tomato paste.
  • 2. In food processor, pure shallot, garlic, dried chili and tomatoes until smooth.
  • 3. Heat the oil in medium heat in cooking pot. Add the spices pure, cook and stir in about 5-8 minutes until fragrant.
  • 4. Add short ribs and sauce mixture. Cook and stir until ribs and sauce mix together.
  • 5. Let the meat to cook and the sauce to bubble, reduce the heat to low, covered. Stir and turn occasionally. Cook until meat is tender and the sauce become thick (it's about 1-1½ hours)
