3 to 4 large carrots, peeled
1 English cucumber, halved lengthwise, seeded and cut into 1/2-inch pieces
1 shallot, thinly sliced lengthwise
Kosher salt
1 1/2 tablespoons creamy peanut butter
1 tablespoon soy sauce
1 tablespoon mirin
1 1/2 teaspoons rice vinegar
1 teaspoon toasted sesame oil

1/2 clove garlic, finely grated
10 to 12 fresh mint leaves, thinly sliced
8 basil leaves, thinly sliced

Steps:

  • Use a vegetable peeler to shave the carrots into thin wide ribbons; discard the last thick strip. Transfer the carrot ribbons to a large bowl, fill with ice water and let stand 10 minutes.

Tips:

  • Use high-quality sesame seeds: The quality of your sesame seeds will greatly affect the flavor of your dish. Look for seeds that are fresh and have a nutty, earthy aroma.
  • Toast your sesame seeds before using: Toasting sesame seeds brings out their flavor and makes them more fragrant. You can toast them in a dry skillet over medium heat for a few minutes, or in a toaster oven at 350 degrees Fahrenheit for 5-7 minutes.
  • Use a good quality soy sauce: Soy sauce is a key ingredient in this dish, so it's important to use a good quality one. Look for a soy sauce that is made with whole soybeans and has a rich, complex flavor.
  • Don't overcook the carrots: Carrots should be cooked until they are tender but still have a bit of a bite to them. Overcooking them will make them mushy.
  • Serve immediately: This dish is best served immediately after it is made. The sesame sauce will thicken as it sits, so if you need to make it ahead of time, be sure to reheat it before serving.

Conclusion:

Spicy sesame carrot noodles are a delicious and easy-to-make dish that is perfect for a quick lunch or dinner. The combination of spicy and savory flavors, along with the crunchy texture of the carrots, makes this dish a winner. Plus, it's a healthy and vegan dish that is packed with flavor.
