HONEYDEW MELON WITH ROQUEFORT CHEESE
This comes from the IGA line of recipes. I don't know if Roquefort cheese is available outside of Quebec, but it is a blue cheese, so you can substitute another blue cheese for it.

Steps:
- For the salad, place the melon on sheets of parchment paper and place in the freezer until very cold and slightly crunchy, 25 to 30 minutes. Place the mizuna, lettuce, fennel and prosciutto in a large bowl.
- For the vinaigrette, pass the honeydew chunks through a food mill, or puree them in a food processor and pass the puree through a mesh strainer to make 2 cups. Place the juice in a saucepan over medium heat. Reduce until 1/2 cup of liquid remains, about 25 minutes.
- Place the reduced liquid in a blender set on low. Drizzle in the oil and lime juice; then add the zest and salt. Adjust seasoning with pepper, more salt, lime juice and lime zest.
- Add cup of the vinaigrette to the bowl and toss well. Add the melon pieces and toss lightly. Adjust to taste with more dressing. Serve immediately in separate bowls, drizzling around the edge of each bowl with a teaspoon of hazelnut oil. Garnish with the nuts.

Tips:
- Choose ripe, firm honeydew melon. The melon should be heavy for its size and have a slightly sweet aroma. Avoid melons that have bruises or soft spots.
- Cut the melon into thin slices. This will help the melon absorb the marinade more easily and cook evenly.
- Marinate the melon in a mixture of olive oil, honey, lime juice, garlic, and chili powder. This will help to infuse the melon with flavor and make it more tender.
- Grill the melon slices over medium heat until they are slightly charred and caramelized. This will give the melon a smoky flavor and a slightly crispy texture.
- Serve the grilled melon slices immediately. They can be enjoyed as a side dish or as a main course.
Conclusion:
Spicy savory sweet honeydew melon is a delicious and unique dish that is perfect for a summer cookout or party. The melon is marinated in a flavorful mixture of olive oil, honey, lime juice, garlic, and chili powder, then grilled until slightly charred and caramelized. The result is a dish that is both sweet and savory, with a slightly spicy kick. Serve the grilled melon slices immediately as a side dish or as a main course.
