1/4 cup olive oil
3 garlic cloves, chopped
1/2 teaspoon dried crushed red pepper flakes
1/3 cup raisins
Salt
2 tablespoons pine nuts, toasted

Steps:

  • Working in batches, cook the broccoli rabe in a large pot of boiling salted water until crisp tender, about 1 minute per bunch. Transfer the broccoli rabe to a large bowl of ice water to cool. Reserve about 1/4 cup of the cooking liquid. Strain the cooled broccoli rabe and set aside.
  • Heat the oil in a heavy large skillet over medium heat. Add the garlic and red pepper flakes, and saute until the garlic is golden, about 1 minute. Reduce heat to medium-low. 1 pound firm tofu, rinsed, patted dry, and sliced 1/2 inch thick
2 pounds broccoli rabe, tough stalks trimmed
4 tablespoons extra-virgin olive oil
8 plump garlic cloves
1/2 teaspoon hot red pepper flakes
Coarse sea salt
Freshly milled black pepper
Lemon wedges, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, combine the lemon juice, soy sauce, basil, oil, vinegar, and lemon zest. Lay the tofu slices in a baking dish that can hold them in a single snug layer. Pour the marinade over the tofu. Bake for 30 minutes, or until the tofu is nearly dry and well browned.
