JOLEAN'S HOMINY AND SAUSAGE

Jolean's Hominy and Sausage image

This was one of those staple meals that Mom came up with when funds were low...It's just simple, cheap, comort food and it's the only way my siblings and I would ever eat hominy...I still love it! (NOTE: I add 1 tsp. parsley flakes to it when I season with salt & pepper, but that's not part of the original recipe...AND, I prefer to use Sage flavored sausage.)

Categories     One Dish Meal

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 6

1 lb ground sausage (Maple flavor or Sage flavor, according to your preference)
1/2 onion, finely diced
1/2 tablespoon minced garlic
2 (14 1/2 ounce) cans yellow hominy, drained (or white)
1 tablespoon butter
salt & pepper

Steps:

  • In a large skillet, brown the sausage and cut into chunks. Remove sausage and drain grease but leave drippings in the pan.
  • Saute onion and garlic in butter in the same pan with the sausage drippings. Add hominy and cook over medium heat stirring frequently, until heated through. Sprinkle with salt & pepper to taste.
  • Add sausage back to the skillet for about 5-10 minutes, stirring frequently until heated through.
  • Serve with big, fluffy biscuits with butter and honey! YUM!
  • Oh, just a NOTE: My brother and my Dad always mixed in some catsup with theirs -- I used to put some on the side and dip the sausage into it -- Mom didn't care much for that when we added catsup, though! LOL!

MARY'S HOT & SPICY SAUSAGE & CABBAGE SOUP

Mary's Hot & Spicy Sausage & Cabbage Soup image

A spicy tomato soup with sausage and cabbage. This is my own creation and very easy to make. The full amount of cayenne makes it quite hot so start low if you don't eat cayenne frequently.

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 lb sliced smoked sausage or 1 lb kielbasa
1 large onion, chopped
1 celery rib, sliced
1 (16 ounce) can diced tomatoes
1 (46 ounce) can tomato juice
1 tablespoon salt (or to taste)
1 -1 1/2 tablespoon ground cayenne pepper
2 g Splenda sugar substitute (or one T sugar)
1/2 teaspoon fresh minced garlic

Steps:

  • Slice the sausage, onion, celery and place in 6 quart pan. Add the diced tomatoes and tomato juice.

  • Add cabbage and cook just until the cabbage is tender--will only take 5-10 minutes.

Tips:

  • Choose the right sausage: For a spicy sausage soup, use a spicy sausage that you enjoy. Some good options include chorizo, andouille, or kielbasa.
  • Don't be afraid to add more spice: If you like your soup extra spicy, add more chili peppers or cayenne pepper. You can also add some diced jalapeños or serrano peppers.
  • Use fresh vegetables: Fresh vegetables will give your soup the best flavor. If you can, use organic vegetables whenever possible.
  • Brown the sausage before adding it to the soup: This will help to develop the flavor of the sausage and prevent it from becoming greasy.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld together and create a delicious, flavorful soup.
  • Serve the soup with your favorite toppings: Some good options include sour cream, shredded cheese, diced avocado, or tortilla chips.

Conclusion:

Spicy sausage soup with hominy is a delicious, hearty soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With its bold flavors and spicy kick, this soup is sure to become a favorite in your household.
