Calling all sausage and cheese lovers! This spicy sausage casserole is the ultimate comfort food, perfect for a cozy dinner or a potluck. Featuring a delectable combination of spicy sausage, tender pasta, creamy cheese sauce, and a crispy breadcrumb topping, this dish is a flavor explosion in every bite. Our recipe includes step-by-step instructions to guide you through the process of creating this hearty and satisfying casserole. Additionally, we've included a vegetarian version for those who prefer a meatless option.
For the classic spicy sausage casserole, you'll start by browning the sausage and then simmering it in a flavorful sauce made with diced tomatoes, green chilies, and spices. Next, you'll prepare a creamy cheese sauce using a blend of cheeses, milk, and seasonings. The cooked pasta is then tossed in the cheese sauce and layered in a casserole dish along with the sausage mixture. Finally, a crispy breadcrumb topping is added for an extra layer of texture and flavor.
Our vegetarian version offers a delicious alternative with a hearty combination of vegetables and plant-based sausage. You'll sauté a variety of vegetables like bell peppers, onions, and zucchini, then add them to a rich tomato sauce. The plant-based sausage is crumbled and cooked separately, then mixed into the vegetable sauce. The remaining steps are similar to the classic version, with the vegetable mixture taking the place of the sausage in the casserole.
Both the classic and vegetarian spicy sausage casseroles can be customized to your liking. Feel free to adjust the level of spiciness by choosing milder or hotter sausage and adjusting the amount of chili peppers. You can also add other vegetables to the vegetarian version, such as mushrooms or spinach. With its versatility and crowd-pleasing flavor, this spicy sausage casserole is sure to become a favorite in your kitchen.

KITTENCAL'S SPICY MEXI SAUSAGE AND RICE CASSEROLE
Substituting ground beef for the spicy Italian sausages will not be as good, Jimmy Dean's Spicy Pork Sausage may be used in place of the spicy Italian sausages --- although I have listed black beans red kidney beans also work well or you may use what you like, or if you are not a lover of beans you may omit, can also add in a 4-ounce can green chilies, I use lots of garlic for this you may reduce amount if desired
