My BF and I decided to improvise in the kitchen tonight and came up with this wonderful soup. It has a bit of a kick but awesome flavor. We both stuffed ourselves. All measurements are estimated, we were having too much fun throwing things in the pot. :)

MARY'S HOT & SPICY SAUSAGE & CABBAGE SOUP

Mary's Hot & Spicy Sausage & Cabbage Soup image

A spicy tomato soup with sausage and cabbage. This is my own creation and very easy to make. The full amount of cayenne makes it quite hot so start low if you don't eat cayenne frequently.

Time 45m

Yield 8-10 serving(s)

Number Of Ingredients 10

1 lb sliced smoked sausage or 1 lb kielbasa
1 large onion, chopped
1 celery rib, sliced
1 (16 ounce) can diced tomatoes
1 (46 ounce) can tomato juice
1 tablespoon salt (or to taste)
1 -1 1/2 tablespoon ground cayenne pepper
2 g Splenda sugar substitute (or one T sugar)
1/2 teaspoon fresh minced garlic
1/3-1/2 head cabbage, chopped

Steps:

  • Slice the sausage, onion, celery and place in 6 quart pan. Add the diced tomatoes and tomato juice.
  • Boil first 6 ingredients until onion and celery are tender.
  • Add salt, cayenne, splenda and garlic. Adjust to taste preference. If soup is too thick, add a cup of water.
  • Add cabbage and cook just until the cabbage is tender--will only take 5-10 minutes.

Tips:

  • Choose the right sausage: Andouille, kielbasa, or Italian sausage are all great options for this soup. If you want a spicier soup, choose a sausage with a higher Scoville rating.
  • Use fresh cabbage: Fresh cabbage will give your soup the best flavor. If you only have pre-shredded cabbage, be sure to rinse it well before using.
  • Don't overcrowd the soup pot: If you add too much sausage and cabbage to the pot, the soup will be too thick. Add the ingredients in batches if necessary.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and the cabbage to soften.
  • Serve with your favorite toppings: Sour cream, shredded cheese, and chopped green onions are all great options.

Conclusion:

This spicy sausage and cabbage soup is a hearty and flavorful meal that is perfect for a cold winter day. It is also very easy to make, and it is a great way to use up leftover sausage. So next time you are looking for a quick and easy meal, give this soup a try.
