Steps:
- Preheat your oven to 450 degrees.
- Wash and scrub the sweet potatoes.
- Cut each sweet potato into bite-sized chunks (make each piece roughly about an inch).
- Add the sweet potato pieces, the extra virgin olive oil, cinnamon, and chipotle to a gallon-sized storage bag.
- Close the storage bag and shake, making sure all of the spices are evenly distributed on the pieces (otherwise you might find out what happens when too much chipotle sticks to an individual piece).
- Spread out the spiced sweet potato pieces in an even layer onto a baking sheet.
- Salt to taste.
- Bake the sweet potatoes in the oven for 15 minutes, then using a spatula to turn them, place them back in the oven for another 15-20 minutes. If you like them crisper, you can add a few minutes, just make sure to check on them so they don't burn. Serve them as they are, or you can dip them in ketchup like french fries.

SPICY MAPLE ROASTED PORK CHOPS AND SWEET POTATOES
This was another successful, tossed-together kitchen creation. It is best described as spicy pork chops surrounded by roasted sweet potatoes coated in a spicy maple glaze. The sweet potatoes turn out soft on the inside and somewhat crispy on the outside, and the pork chops turn out juicy and spicy. DH and I enjoyed eating a bite of sweet potato with each bite of pork chop. I like to leave the skin on my sweet potatoes when roasting due to its nutritional value and crispy texture, but feel free to peel if desired. This truly is spicy. If you desire to tone down the heat, please do use less cayenne pepper.

SPICY ROASTED POTATOES
Steps:
- 1 In a medium bowl, mix the mustard oil, garlic, tarragon, paprika, and red pepper into a smooth paste. 2 Cut the potatoes into 1 inch pieces. 3 Pat dry with paper towels. Add to the bowl and toss to coat. 4 Coat a baking sheet with cooking spray. Add the potatoes in a single layer. 5 Bake at 425 for 30-35 minutes or until tender. (Cooking time depends on how small you cut the potatoes). 6 Serve hot as a snack (like French fries) or a side dish.
Tips:
- Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Bliss are best for roasting as they hold their shape well. Avoid starchy potatoes like Russets, as they tend to fall apart when roasted.
- Cut the potatoes evenly: This will ensure that they cook evenly. Aim for 1-inch cubes or wedges.
- Toss the potatoes with oil and seasonings: This will help them to crisp up and develop flavor. You can use any type of oil you like, but olive oil or avocado oil are good choices. For seasonings, try a combination of salt, pepper, garlic powder, onion powder, and paprika.
- Roast the potatoes at a high temperature: This will help them to get crispy on the outside and tender on the inside. Aim for 425 degrees Fahrenheit.
- Don't overcrowd the pan: If you overcrowd the pan, the potatoes will steam instead of roast. Make sure there is enough space between the potatoes so that they can get crispy all over.
- Roast the potatoes until they are tender and golden brown: This will usually take about 20-30 minutes, but the cooking time may vary depending on the size and type of potatoes you are using.
Conclusion:
Spicy roasted potatoes are a delicious and easy side dish that can be enjoyed with a variety of meals. They are perfect for potlucks, parties, or weeknight dinners. With a few simple tips, you can make sure your spicy roasted potatoes turn out perfectly every time.
