SPICY MEATLOAF SANDWICH

Spicy Meatloaf Sandwich image

Provided by Food Network

Time 1h50m

Yield 4 big sandwiches

Number Of Ingredients 19

1 pound grass-fed ground beef
1 cup your favorite spicy salsa or Mexican tomato sauce
1/2 cup breadcrumbs
3 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 egg
1 jalapeno, seeded and chopped
2 tablespoons ketchup
4 brioche rolls
Grilled pickled jalapenos
Bacon
Tomato slices
Cole slaw
Sriracha Mayo (equal parts mayonnaise and Sriracha and 1 squeeze of lime juice)
Blue cheese
Pimento cheese
And we always top with green onions. We love the color and the crunch!

Steps:

  • Preheat the oven to 425 degrees F. In a large mixing bowl, mix the beef, salsa, breadcrumbs, 2 tablespoons Worcestershire, salt, pepper, 1/2 teaspoon cayenne, egg and jalapeno. Use your hands and mix well. Pat down into a loaf pan. Top with the ketchup, the remaining 1 tablespoon Worcestershire, and the remaining 1/2 teaspoon cayenne. Smooth over the top and bake until cooked through, about 1 hour. Remove from the oven and let cool for 30 minutes. Now this is where the recipe gets fun and you get to use your imagination!!! After the meatloaf cools, slice into 8 thin slices (use 2 slices for each sandwich). You can use any kind of bread. We use a brioche roll, but you can use a kaiser, country Italian or anything that will hold up a messy sandwich. Use some of our suggested toppings to perfect your meatloaf sandwich. Enjoy!

ROAST BEEF AND BLUE CHEESE ROLL-UP

Roast Beef and Blue Cheese Roll-Up image

Provided by Food Network Kitchen

Time 50m

Yield 16 rolls

Number Of Ingredients 7

1/3 cup unsalted butter, softened
1/3 cup crumbled blue cheese (1 1/2 ounces), such as Roquefort or Maytag blue
1 pound thinly sliced rare roast beef
Kosher salt and freshly ground black pepper
1 bunch watercress
1 red bell pepper, stemmed, seeded, and cut into thin strips
1 yellow pepper, stemmed, seeded, and cut into thin strips

Steps:

  • Cream the butter and cheese with a fork in a medium bowl until evenly mixed together.
  • Lay the roast beef slices on a flat surface to make 16 rectangles, each about 5 by 8 inches. Depending on the size of the slices, it may be necessary to combine them, overlapping slightly along the sides. Season the meat with salt and pepper. Spread 2 teaspoons of the cheese mixture along the short end of the beef rectangle. Strip the leaves from a watercress sprig and scatter the leaves over the cheese, and then top with a few pieces of both red and yellow peppers. Roll the beef, enclosing the butter and vegetables, and continue rolling into a tight cylinder. Wrap snugly in plastic wrap. Repeat with the remaining ingredients. Refrigerate until chilled, at least 30 minutes.
  • To serve, trim the ends and halve the rolls, crosswise.

MEATLESS MARINARA SUB SANDWICH

Meatless Marinara Sub Sandwich image

Absolutely irresistible! Warm and jam-packed with flavor, this is a meal within two slices of bread. It's all about layers, colors and textures. We start with a layer of fresh basil pesto, top it with a delicious black bean burger, then an enticing layer of warm marinara tomato sauce, sweet roasted red peppers and balsamic onions, a slice of cheese (I use vegan) and finish with a few deep-green crisp baby spinach leaves.

Categories     main-dish

Time 1h

Yield 2 servings

Number Of Ingredients 15

1 small red onion, halved and thinly sliced
1 teaspoon olive oil
1/2 teaspoon balsamic vinegar
1 jarred roasted red pepper, thinly sliced
2 store-bought black bean burger patties
Two 6-inch whole-wheat sub sandwich rolls
1/4 cup store-bought pesto
2 slices vegan Cheddar-style cheese
1/4 cup warm Classic Marinara Sauce, recipe follows
Small handful of baby spinach leaves
2 medium cloves garlic, minced
3 tablespoons extra-virgin olive oil
Two 14-ounce cans chopped tomatoes (preferably organic)
Handful of fresh basil leaves, chopped
Flaky sea salt and freshly ground black pepper

Steps:

  • To make the balsamic onions, fry the onions in a small saute pan with the oil over medium heat until softened, about 8 minutes. Stir in the vinegar. Push the onions to one side of the pan and add the sliced pepper to the other side to warm through.
  • Cook the burger patties according to the package instructions.
  • Cut the rolls in half and toast or warm.
  • Spread a layer of pesto over the inside of each roll. Cut the burger patties in half and lay two pieces along the bottom half of each roll. Cut the cheese slices in half and lay on top of each piece of burger, then add a spoonful of Classic Marinara Sauce. Top with the balsamic onions, red peppers and a scattering of spinach.
  • Place the top halves of the rolls on top of the subs and they are ready to devour.
  • In a medium pan, gently heat the garlic in 2 tablespoons of the oil until softened, being mindful not to let it brown, about 2 minutes. Add the tomatoes and stir well.
  • Turn up the heat to a bubbling simmer and allow the juices to cook off, stirring occasionally, about 20 minutes. Turn off the heat and stir in the remaining 1 tablespoon oil, the basil and season with salt and pepper. The marinara sauce will keep in the fridge for up to 5 days and freezes well.

THE BEST ROAST BEEF FOR SANDWICHES

The Best Roast Beef for Sandwiches image

The best cut of roast beef for sandwiches isn't necessarily the same as what you'd want hot from the oven. A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. As long as you pull the meat out of the oven when it reaches between 125 and 130 degrees, you'll get nicely rare meat. More sandwich recipes.

Time 6h45m

Yield 6 to 10 sandwiches

Number Of Ingredients 6

2 small garlic cloves, grated
2 1/2 teaspoons kosher salt
2 teaspoons black pepper
2 teaspoons rosemary leaves
2 1/2 pounds boneless beef top loin roast (leave the fat on top)
Extra-virgin olive oil, as needed

Steps:

  • In a small bowl, stir together the garlic, salt, pepper and rosemary. Spread the paste all over the meat. Cover loosely with plastic wrap and refrigerate at least 3 hours or overnight.
  • When you are ready to prepare the meat, remove it from the fridge and let stand at room temperature for 30 to 60 minutes.
  • Heat oven to 325 degrees. Place a wire rack in a rimmed baking sheet.
  • Coat the roast lightly with olive oil. Transfer to the wire rack and roast for 75 to 95 minutes, until an instant thermometer inserted into the center of the roast registers 125 to 130 degrees for medium-rare.
  • Transfer the meat to a cutting board and let cool completely before carving (trim off the fat cap if you plan to serve it cold). The meat can be roasted three days ahead; cool completely before refrigerating.
