Fresh Corn Casserole with Red Bell Peppers and Jalapenos image

Try Ree Drummond's Fresh Corn Casserole with Red Bell Peppers and Jalapenos Food Network recipe for a spicy take on corn casserole.

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 7

8 ears corn (still in the husk)
2 red bell peppers, diced
2 fresh jalapenos, diced
1 cup heavy cream
1/2 cup milk
Salt and freshly ground black pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
  • Add the red bell peppers, jalapenos, heavy cream, milk, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.

SPICY CORN CASSEROLE

Spicy Corn Casserole image

Nice alternative to having plain old corn out of the can. Can use frozen, defrosted corn too, of course. Nice side dish for Tex Mex dishes like tacos or fajitas.

Provided by Dreamgoddess

Categories     Corn

Time 40m

Yield 6 serving(s)

Number Of Ingredients 5

2 (15 1/4 ounce) cans whole kernel corn, drained
1 (4 ounce) can diced green chilies
2 tablespoons butter or 2 tablespoons margarine
8 ounces cream cheese
1/4 cup milk

Steps:

  • In medium saucepan over low heat, melt butter, cream cheese and milk until smooth and creamy.
  • Stir corn and green chilies into cream cheese mixture.
  • Pour mixture into 2 quart casserole dish.
  • Bake in 350 degree oven for 30 minutes.

Tips:

  • Use fresh ingredients:
    • Fresh corn on the cob is best for this recipe, but frozen or canned corn can also be used.
    • Use fresh, finely chopped bell peppers for a more intense flavor.
    • Fresh cilantro adds a bright, citrusy flavor to the casserole.
  • Don't overcook the rice:
    • Cook the rice according to the package directions, but be careful not to overcook it, or it will become mushy.
  • Use a good quality cheese:
    • The type of cheese you use will have a big impact on the flavor of the casserole. Use a sharp cheddar cheese for a more intense flavor, or a mild cheddar cheese for a milder flavor.
  • Add some spice:
    • This recipe calls for diced jalapenos, but you can adjust the amount of spice to your liking. If you don't like spicy food, you can omit the jalapenos altogether.
  • Don't skip the topping:
    • The topping adds a delicious crunch and flavor to the casserole. Don't skip it!

Conclusion:

This spicy rice corn casserole is a delicious and easy-to-make dish that is perfect for a potluck or family dinner. It's packed with flavor and sure to be a hit with everyone who tries it. So next time you're looking for a new recipe, give this one a try!
