SPICE-RUBBED RIBS

Spice-Rubbed Ribs image

For grilling, here's the rub I recommend. It's made with a wonderful blend of spices. If you have some left after making ribs, put it in a shaker and use it another day on pork or beef roasts, tenderloins, steaks and more. It's great alone or under sauce. -Cheryl Ewing, Ellwood City, Pennsylvania

MEXICAN SPICE RUBBED PORK ROAST

Mexican Spice Rubbed Pork Roast image

Provided by Mary Younkin

Number Of Ingredients 12

1.5 - 2 lb sirloin tip pork roast
2 tablespoons brown sugar
2 teaspoons kosher salt
2 teaspoons chili powder
1 1/2 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon granulated garlic or garlic powder
1/2 teaspoon onion powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
3 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees. Combine all the spices in a small bowl.
  • Add the olive oil and stir well to combine. It will be a thick, paste-like consistency. Allow this mixture
  • to rest for 15 minutes.
  • Line a small baking sheet with foil and place a wire rack over it. Rinse
  • the roast and pat dry. Rub the spice mixture all over the roast,
  • completely covering all sides with spices.
  • Roast 1 - 1.5 hours in the preheated oven. The cooking time really will vary that much, if you have an internal thermometer, this is the time to use it. Otherwise, keep an eye on the roast and check the temperature every few minutes as it gets close to done. Remove from the oven when
  • the meat reaches an internal temperature of 145-150 degrees. Let sit 15
  • minutes before slicing. Enjoy!
  • A couple of side notes: I cooked this pork roast for about an hour and a half. I set it on the counter to warm a bit before putting it in the oven. It was 44 degrees when I put it into the oven. Also, in the summertime (aka, warmer house days) I try to remove the
  • roast from the oven between 142 - 145 degrees. Depending on the temperature of your house, the meat might increase in temperature by as much as ten degrees. So, be careful not to overcook it and dry out the roast. When I cooked this roast, my house was much cooler and it only increased one degree while resting before the temperature started to drop.

SLOW-ROASTED SPICED PORK

Slow-Roasted Spiced Pork image

Provided by Ina Garten

Categories     main-dish

Time 7h50m

Yield 8 to 10 servings

Number Of Ingredients 12

1 (7- to 9-pound) bone-in pork butt with a layer of fat on top
6 garlic cloves
1 large yellow onion, chopped
1 jalapeno pepper, ribs removed, seeded, and chopped
1/4 cup chopped fresh oregano leaves
1 1/2 tablespoons ground cumin
1 1/2 teaspoons chipotle chile powder
Kosher salt and freshly ground black pepper
1 1/2 tablespoons apple cider vinegar
1/4 cup good olive oil
1 (750 ml) bottle dry white wine, such as Pinot Grigio
Lime wedges, for serving

Steps:

  • Preheat the oven to 300 degrees F. Test your oven with an oven thermometer to be sure it's accurate!
  • Score the fat on the pork diagonally with a sharp knife in a crosshatch pattern. With a small paring knife, make a dozen 1/2-inch-deep cuts in the top and sides of the pork to allow the seasonings to permeate the meat.
  • Place the garlic, onion, jalapeno, and oregano in a food processor and process until the ingredients are finely chopped. Add the cumin, chile powder, 1 tablespoon salt, and 1 1/2 teaspoons pepper and process for 30 seconds to make a paste. Add the vinegar and olive oil and process to incorporate. Rub the mixture all over the pork, including the sides and the bottom, and place the pork in a large roasting pan, fat side up. Pour 2 cups of the wine into the pan and cover the whole roasting pan tightly with aluminum foil. Roast for 2 1/2 hours, remove the foil, and roast for another 4 to 4 1/2 hours, until the meat is very, very tender when tested with a carving fork. Every 2 hours, add another cup of wine to keep some liquid in the pan.
  • Remove the pan from the oven, cover it tightly with aluminum foil, and allow the meat to rest for 15 to 30 minutes. Slice, sprinkle with salt, and serve with lime wedges on the side.

After trying a few different recipes for a dry rub, we came up with our own version. We like more spicy than sweet.

Provided by DeeDee

Categories     Pork

Time 1h30m

Yield 2-4 serving(s)

Number Of Ingredients 11

4 tablespoons brown sugar
1 tablespoon seasoning salt
2 tablespoons chili powder
1/2 teaspoon pepper
1 teaspoon cayenne pepper
1/2 teaspoon rosemary (crushed)
1/2 teaspoon thyme
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon dry mustard
1 full pork back rib

Steps:

  • Wash rack of ribs, remove membrane on back, and pat dry with paper towel. You can either leave as a rack and thread onto a spit or cut into 2-3 rib sections.
  • Mix all remaining ingredients until well blended. Rub the mix over both sides of ribs until it's all used up. I sometimes double the recipe to get a really good coating. You can either put in fridge overnight or grill at 350 F right away on bbq over indirect heat. The bbq acts more like an oven this way. The sugar will burn if you grill over direct flame.
  • They will take an hour to cook through.

Tips:

  • For a more intense flavor, use a combination of brown sugar and maple syrup. You can also add a teaspoon of chili powder or cayenne pepper for an extra kick.
  • If you don't have any liquid smoke, you can use smoked paprika instead. Just add 1 tablespoon to the rub.
  • Let the ribs marinate for at least 30 minutes before cooking. This will help the flavors to penetrate the meat.
  • When cooking the ribs, be sure to cook them slowly and evenly. This will help to ensure that they are tender and juicy.
  • Serve the ribs with your favorite sides, such as coleslaw, potato salad, or baked beans.

Conclusion:

This spicy rib rub is a delicious and easy way to add flavor to your next pork roast. With just a few simple ingredients, you can create a rub that will give your pork a mouthwatering flavor. So next time you're looking for a tasty and easy way to cook pork, give this spicy rib rub a try. You won't be disappointed!
