SPICY GARLIC CHICKEN WINGS WITH CHOW CHOW AND BLUE CHEESE DIP

Steps:
- For the wings: Preheat the oven to 325 degrees F. Combine the wings, vinegar, salt, sugar and chile in a large pot. Cover with water and bring to a boil. Once at a boil, remove from the heat, strain the wings and pat them dry. Place the wings on a baking sheet. Bake until the wings are dry, about 15 minutes.
- While the wings bake, fill a large, deep pot with 3 inches of oil. Place over medium-high heat and bring to 350 degrees F on a deep-fry thermometer. Working in batches, fry the wings until crispy and cooked through, about 6 to 8 minutes per batch, raising or lowering the heat as necessary to keep the oil at temperature. Drain the wings on a wire rack set over a sheet pan.
- Meanwhile, combine the garlic and olive oil in a medium saucepan. Place over medium heat until the oil just simmers. Cover the pan, adjust the heat and simmer until the garlic is tender, about 15 minutes. Allow to cool slightly, then transfer the oil and garlic to a blender and blend until smooth. Add the hot sauce and pulse until combined. Add a little water if necessary so the mixture is about as thick as syrup. Pour the sauce into a very large bowl. Add the wings and toss to coat.
- For the chow-chow: Combine the celery, carrots, vinegar, sugar and salt in a medium saucepan. Bring to a boil over medium-high heat. Remove from the heat and let cool. Drain.
- For the dip: Combine the blue cheese, yogurt, mayonnaise, pepper and celery salt in a food processor. Blend until smooth.
- Serve the wings with the dip and chow-chow on the side.

- Toss the wing pieces in salt and pepper in a bowl and place on the middle grate of the smoker. Smoke for 15 minutes, then flip and smoke for an additional 15 minutes. Remove from the smoker and set aside.
- For the sweet and spicy glaze: Meanwhile, add the ketchup, vinegar, molasses, Worcestershire sauce, brown sugar and chile flakes to a small saucepan and bring to a boil. Reduce to a simmer, then cook until all the sugar is dissolved, about 2 minutes. Remove from the heat and cool to room temperature.
- For the feta ranch dressing: Add the sour cream, feta, parsley, salt and pepper to a small bowl and mix to combine. Place in a serving bowl and garnish with the scallions.
- To finish: Preheat several inches of oil in a Dutch oven to 375 degrees F. Deep-fry the smoked chicken wings in batches, turning occasionally, until cooked through and crispy, 4 to 5 minutes. Combine the butter with 1/2 cup sweet and spicy glaze in a medium bowl. Immediately toss the fried wings into the butter glaze mixture to coat.
- Serve with the feta ranch dressing, baby carrots and celery sticks.

AIR-FRYER SPICY CHICKEN WINGS
Chicken wings turn out perfectly when they're cooked in an air fryer. Here, they are tossed with a bit of baking powder before frying, which yields a particularly crunchy, browned skin with a rough, craggy texture. It's a technique based on one from Ben Mims's cookbook, "Air Fry Every Day" (Clarkson Potter, 2018), which he learned from J. Kenji López-Alt from Serious Eats. After frying, the wings are tossed with a honey and chile-based sauce spiked with fresh lemon juice and zest. Sticky, fiery and impossible to stop eating, they are an easier, leaner version of deep-fried chicken wings, made without the mess.

Steps:
- In a large bowl, toss chicken with baking powder, salt and pepper until the pieces are thoroughly coated. Spread the pieces out on a rack placed on a rimmed baking sheet and refrigerate, uncovered, for at least 1 hour and up to overnight. (The longer, the better.)
- Heat the air fryer to 400 degrees, if preheating is necessary.
- Arrange chicken on air fryer rack so all of the pieces are standing up against the edges of the basket, with as much space around each one as possible. Fry until golden brown and crispy, about 20 minutes.
- Meanwhile, in a large bowl, whisk together butter, lemon zest and juice, honey, Tabasco and sriracha.
- Immediately transfer the fried chicken wings to the bowl with the honey-chile sauce and toss well. Serve at once.

Tips:
- Use a good quality, flavorful hot sauce. This is the key ingredient in the recipe, so don't skimp on it. Try to find a sauce that has a good balance of heat and flavor.
- Don't be afraid to adjust the amount of hot sauce to your own taste. This recipe is a starting point, so feel free to add more or less hot sauce depending on how spicy you like your wings.
- If you don't have buttermilk, you can make your own by adding 1 tablespoon of vinegar or lemon juice to 1 cup of milk. Let it sit for 5 minutes before using.
- Be sure to coat the chicken wings in the buttermilk mixture for at least 30 minutes before frying. This will help to tenderize the chicken and give it a crispy coating.
- When frying the chicken wings, be sure to maintain a constant temperature of 350 degrees Fahrenheit. This will help to ensure that the chicken cooks evenly and doesn't burn.
- Serve the chicken wings immediately with your favorite dipping sauce. Ranch dressing is a classic choice, but you can also try blue cheese dressing, honey mustard, or barbecue sauce.
