6 oz. ground pork ((170g))
1 tablespoon finely chopped scallions
1/2 teaspoon sesame oil
1 teaspoon soy sauce
2 teaspoons Shaoxing wine
¼ teaspoon salt
¼ teaspoon sugar
1 tablespoon peanut oil ((or canola oil))
2 tablespoons water
1 pinch fresh ground white pepper
18 wonton wrappers
3 tablespoons light soy sauce
1/2 teaspoon Chinese black vinegar ((preferred, or rice wine vinegar))
6 tablespoons homemade chili oil ((plus 2 teaspoons of the toasted chili from the oil))
Salt ((to taste))
1 teaspoon sesame paste ((or tahini))
2 teaspoons sugar
2 cloves garlic ((finely minced))
Chopped scallion

Steps:

1/2 pound ground pork, not too lean
1/2 pound fresh shrimp, peeled, deveined and roughly chopped in 1/4-inch pieces
Salt and pepper
1 tablespoon sweet rice wine, such as Shaoxing rice wine (or use sherry)
1 tablespoon soy sauce
1 tablespoon sugar
1 tablespoon finely grated ginger
2 cloves garlic, minced
1 teaspoon spicy Chinese bean paste, also called chili bean sauce (or use chile paste)
2 serrano chiles, finely chopped
1 1/2 cups chopped Chinese garlic chives (or use 3/4 cup chopped scallions, green and white parts)
36 wonton skins, about 3 by 3 inches, available at Asian markets and many grocery stores
1 small egg, beaten
Cornstarch for dusting
8 ounces baby spinach leaves
1/2 cup chopped cilantro
8 cups good chicken broth, hot, salted to taste
Red pepper oil (optional), see note

Steps:

  • Put pork and shrimp in a chilled mixing bowl. Season with salt and pepper and mix briefly with chopsticks, wet hands or wooden spoons. Dust lightly with cornstarch and refrigerate, uncovered, until ready to cook.
  • Bring a large pot of well-salted water to a boil. Meanwhile, put a small handful of spinach leaves and about 2 tablespoons cilantro in each person's deep wide soup bowl. When water is boiling, drop about 10 wontons into pot and cook for 2 minutes. Remove with wire bamboo spider (or a large fine-meshed sieve with a handle) and divide among bowls. Repeat with remaining wontons. Pour about 11/2 cups hot broth over each serving. Drizzle with red pepper oil if desired.

½ cup hoisin sauce
3 tablespoons frozen orange juice concentrate, thawed
2 green onions, minced
1 tablespoon chili-garlic sauce
1 teaspoon (packed) grated orange peel
Filling:
1-1/4 pounds ground pork
3 large green onions, chopped
3 large garlic cloves, finely chopped
2 tablespoons hoisin sauce
1 tablespoon minced peeled fresh ginger
1 tablespoon soy sauce
1 tablespoon oriental sesame oil
1-1/2 teaspoons (packed)grated orange peel
1 teaspoon salt
1 large egg yolk
2 12-ounce packages wonton wrappers
Vegetable oil

Steps:

  • FOR SAUCE: Mix all ingredients in small bowl. Season to taste with salt and pepper. (Can be prepared up to 2 days ahead; cover and refrigerate) FOR FILLING: Mix first 10 ingredients in medium bowl. Position rack in bottom third of oven; preheat to 475 degrees. Using 2-3/4 inch round cutter, cut out round from each wonton wrapper. Brush 1 side of each round with vegetable oil. Gently press wonton rounds, oiled side down, into mini muffin cups. Fill each wonton round with heaping 1 teaspoon of pork filling. Bake wonton rounds with filling, 2 pans at a time, until wonton is crisp and filling is cooked through, about 15 minutes. (Can be made 1 day ahead. Refrigerate until cool, then cover and chill. Rewarm uncovered on baking sheet in 475 degree oven until heated through, about 12 minutes.) Transfer to platter.
