1 large red bell pepper
2 tablespoons EVOO
8 ounces bulk hot Italian sausage or 5 ounces coarsely grated Calabrese salami
4 ounces pancetta, finely diced
1 pound ground pork
2 tablespoons chopped fresh thyme
1 teaspoon fennel seeds
3 to 4 cloves garlic, finely chopped
1 mild or 2 hot fresh red chile peppers, seeded and very finely chopped
1 medium onion, finely chopped
1 sprig fresh oregano, finely chopped
1/4 cup tomato paste
1/2 cup dry red wine
4 to 5 cups chicken stock
1 cup whole milk
1 cup quick-cooking polenta
2 tablespoons butter
1 cup grated pecorino, plus more for serving
Salt and freshly ground black pepper
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Roast the bell pepper over a gas flame, turning with tongs, or broil until the skin is blackened. Transfer to a bowl, cover and let cool. Peel, seed and chop the pepper. Heat the EVOO in a Dutch oven or other heavy pot over medium-high heat. Add the sausage and pancetta and cook until well browned. Add the ground pork, thyme, fennel seeds, garlic, chile peppers, onions, oregano and roasted red peppers and cook until soft, about 5 minutes. Stir in the tomato paste and cook for 1 minute. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add 2 to 3 cups chicken stock and simmer for a few minutes to allow the flavors to combine. Bring 2 cups chicken stock and the milk to a low boil in a saucepan. Whisk in the polenta and cook, whisking, until thick but pourable, 2 to 3 minutes. Remove from the heat. Add the butter and then the cheese, stirring until melted. Season with salt and pepper. Ladle the polenta into shallow bowls and hollow out the center. Fill with the chili and top with more cheese. Garnish with parsley. Cook's Note: The chili can be covered and refrigerated for a make-ahead meal. Reheat over medium heat, and prepare the polenta before serving.

1 large white onion, chopped

1/3 cup chili powder

2 (19-ounce) cans small red beans or kidney beans, rinsed and drained

  • Cook bacon in a 6- to 8-quart heavy pot over moderate heat, turning, until crisp. Transfer with tongs to paper towels to drain and pour off all but 2 tablespoons fat from pot. Crumble bacon. 3 poblanos
2 white onions, quartered
4 garlic cloves, peeled
1 bay leaf
2 limes, halved
1 big bunch fresh cilantro
1 quart low-sodium chicken stock
1 cup masa harina, to tighten it up
Crispy fried tortilla strips, fresh corn tortillas cut into strips and deep fried in vegetable oil
Mexican crema, store-bought with lime zest
Shaved radishes, radishes shaved vertically on a mandoline
Crumbled queso fresco
2 limes, each cut into 8 wedges

Steps:

  • Preheat oven to 325 degrees F.
  • Season the pork shoulder with salt, pepper, fennel and cumin. Take a large roasting dish and place over medium-high heat. Add a 3-count of olive oil and sear pork shoulder all over until golden brown on the outside, 3 to 4 minutes per side. Add vegetables, spreading out tomatillos, poblanos, onion, garlic and bay leaf around the seared pork shoulder. Drizzle with olive oil, squeeze lime juice all over and season with salt and pepper. Cover the whole tray with aluminum foil and roast in the oven for 2 to 2 1/2 hours until the pork is falling apart. Remove from oven, set the pork aside and pull apart. Rake all the other ingredients into a blender (a bit at a time) with the bunch of fresh cilantro and process until smooth. Pour into a large Dutch oven. Set over medium heat and add chicken stock. 1 cup diced carrot (1/2-inch dice)
2 tablespoons minced serrano peppers
3 lbs boneless pork loin, trimmed of all excess fat and cut into 1-inch cubes
1/2 cup all-purpose flour
1 teaspoon kosher salt (plus more if needed)
freshly ground black pepper
2 tablespoons minced garlic
1 (28 ounce) can italian-style plum tomatoes, drained and coarsely chopped
2 tablespoons fresh lime juice
2 teaspoons fresh lime juice
4 cups low-sodium chicken broth
2 tablespoons chopped fresh cilantro
6 thin lime wedges, for garnish
4 cups chicken stock (plus a little extra if needed)
2 teaspoons ground cumin

1 pork tenderloin, trimmed (about 10 ounces)
3 cups chicken stock
1 cup fine cornmeal
1/4 cups chopped Hungarian Wax peppers (about 1 pepper)
1/4 cup crema Mexicana
2 tablespoons butter

Steps:

  • Season the pork with salt and pepper and grill over high heat for about 8 minutes on each side, or until it reaches an internal temperature of 160 degrees F. Allow to rest before slicing.
  • To serve, in shallow bowls, divide the polenta among the bowls, top with a few slices of pork and top with the corn and pepper mixture.
