1 sheet frozen puff pastry (from a 17.25-ounce box), thawed
All-purpose flour, for rolling
1 large egg
2 tablespoons creole mustard
One 12-ounce package precooked andouille sausage, such as Aidell's
2 tablespoons finely chopped fresh dill
1/2 cup creole mustard
1/4 cup ketchup
1/4 cup mayonnaise
2 tablespoons maple syrup
2 tablespoons cider vinegar
Dash hot sauce

Steps:

  • For the sausage bites: Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Unfold the pastry sheet and dust both sides with flour. Roll to an approximately 12-inch square. Cut into four 6-inch squares. Beat the egg in a small bowl. Brush the entire surface of the top of each pastry square lightly with beaten egg. Reserve the egg wash. Brush with the mustard, leaving a 1/2-inch border around the edges. Roll each sausage tightly in a pastry square, crimping the edges to seal. With a serrated knife, trim the loose edges from each roll. Cut each crosswise into 4 sections.
  • Place the bites seam-side down on the prepared baking sheet, about an inch apart. Bake until the pastry is crisp, browned and cooked through, 35 to 40 minutes. Sprinkle with dill.
  • For the creole mayo sauce: Meanwhile, combine the mustard, ketchup, mayonnaise, maple syrup, cider vinegar and a dash of hot sauce in a bowl.
  • Serve the sausage bites warm with the sauce for dipping.

2 tbsp olive oil
3 onions , 2½ sliced, ½ grated
1 red pepper , thinly sliced into strips
pinch of chilli flakes
2 garlic cloves , crushed
2 tsp fennel seed , lightly crushed using a pestle and mortar
400g pork mince
1 long baguette , ends cut off and reserved, remaining part cut into 4 and halved across
2 tbsp tomato ketchup
couple handfuls lamb's lettuce

Steps:

  • Heat half the oil in a frying pan and add the sliced onions, the pepper and some seasoning. Cook on a low heat for 15 mins until the pepper is soft and the onions are caramelised.
  • Meanwhile, put the chilli flakes, garlic, fennel, mince and grated onion in a bowl. Whizz the bread ends into breadcrumbs and add those, too. Season and mix everything thoroughly. Heat a griddle pan and shape the meat mixture into 12 patties. Rub the patties with the remaining oil and griddle for 3-4 mins each side, or until cooked through.
  • Stir the ketchup into the onion mix, heat through, then spoon onto the baguette bottoms. Lay 3 patties on each, scatter with some lamb's lettuce and top with the other half of baguette.
