SPICY ZUCCHINI OATMEAL COOKIES

Spicy Zucchini Oatmeal Cookies image

In my efforts to use the abundance of zucchini in my garden I concocted this little cookie. I prefer my oatmeal cookies to have a little jazz, so if you are not a fan of ground cloves, they can be omitted. It's a not too sweet cake-like cookie that is perfect with your cup of coffee or tea.

Time 30m

Yield 30

Number Of Ingredients 11

1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 ½ teaspoons ground cinnamon
¼ teaspoon ground cloves
½ cup butter, softened
⅔ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
1 cup shredded zucchini
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Stir together the flour, baking soda, cinnamon, and cloves in a bowl; set aside. Beat the butter and brown sugar with an electric mixer in a large bowl until creamy. Add the egg and the vanilla extract. Mix in the flour mixture and oats until just incorporated.
  • Wring the zucchini in a clean towel to remove any excess moisture. Stir the zucchini and raisins into the dough; mixing just enough to evenly combine. Drop batter by rounded teaspoonfuls 2-inches apart onto the prepared baking sheets. Bake for 14 to 16 minutes or until the bottom edges turn golden brown.

SPICY OATMEAL COOKIES

Spicy Oatmeal Cookies image

Another one of my easssssy recipes, I love homemade food with short cuts whenever I can find them. Good cookies.

Provided by mandabears

Categories     Drop Cookies

Time 17m

Yield 36 cookies

Number Of Ingredients 8

1 (18 1/4 ounce) box duncan hines spice cake mix
2 cups uncooked rolled oats
2 eggs
3/4 cup vegetable oil
1/2 cup milk, do not use skim
2 cups raisins
1 cup chopped walnuts
1/4 cup dark brown sugar, packed

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine all ingredients and mix well.
  • Drop cookies from a teaspoon onto a ungreased cookie sheet, (I still spray the cookie sheets with cooking spray) Bake for 12 minutes until cooky tests well when checked with a toothpick.
  • Cool for one minute on cookie sheet.
  • Remove to wire racks to cool.

Tips:

  • Use old-fashioned oats. These oats will give your cookies a heartier texture than quick or instant oats.
  • Toast the oats before using them. This will help to bring out their flavor and make them more crispy.
  • Use a combination of spices. The spices in this recipe (cinnamon, nutmeg, ginger, and cloves) all work well together to create a warm and inviting flavor.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough before baking. Chilling the dough will help the cookies to hold their shape better.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.

Conclusion:

These spicy oatmeal cookies are a delicious and easy-to-make treat. They are perfect for a quick snack or a dessert. With their warm and inviting flavor, these cookies are sure to be a hit with everyone who tries them.
