SPICY MEXICAN SALAD

Spicy Mexican Salad image

Spicy and not to mention healthy salad with corn and black beans that has no oil in it. I grilled corn on the cob and sliced the corn off the cob and used it instead of canned but canned can be used. I serve it with grilled chicken and a slab of cornbread. Yum! This is best if made the night before.

Tips:

  • Use the freshest ingredients you can find. This will make a big difference in the flavor of your salad.
  • Don't be afraid to adjust the spice level. If you like things spicy, add more chili powder or cayenne pepper. If you're not sure how spicy you like it, start with a little bit and add more to taste.
  • Be sure to rinse the couscous before cooking it. This will remove any starch that could make the salad gummy.
  • Let the couscous cool slightly before adding the other ingredients. This will help prevent the salad from getting too watery.
  • Add the vegetables and dressing just before serving. This will help keep the vegetables crisp and the dressing from getting absorbed into the couscous.

Conclusion:

This spicy Mexican couscous salad is a delicious and easy-to-make side dish or main course. It's perfect for a summer potluck or barbecue, and it's also a great way to use up leftover chicken or vegetables. With its zesty flavor and colorful ingredients, this salad is sure to be a hit with everyone who tries it.
